Cuz the secret is the fluffiness from the air bubbles. Also-- never salt raw eggs unless you like to eat rubber. Salt them after they have begun to set if salt is needed. I also know how to freeze eggs, thought to be impossible or inadvisable. You add either a pinch of salt or a BIG pinch of sugar to a quart jar of broken and stirred eggs, and then they can be used for cooking or baking, although the texture is a bit weird. A bit jellified, although the sugar (or salt) prevents them from being too gross. (You just run them through a strainer to restore runniness.) Flavor is fine. A dozen eggs makes a quart usually. Straining the beaten eggs for making a custard is a good idea too, especially for farm-fresh eggs, to get rid of those little fibrous cordlike structures. DuckS (note plural) are doing GREAT, but they seem to be a little stupid......they love the pool, but refuse to learn to get in alone. And, they have a nice dirt ramp into it.......think we have drake and hen. They are not shaped alike and one (Waldo) is bigger. See, um, uh, Kate's friend Brittany bought a duck too......
and it was just loose in their bathroom....Dad said Squeaker had to go......so she came here. The "love" each other, but they eat a LOT!! (If theses critters hide eggs real good and I have babies next spring..........) See, I got it back to eggs!! |

If you're storing them for any length of time, the fridge is a must. Even then, you still run the risk of them going bad if you leave them too long (say more than a couple weeks - tops). Of course, you may get lucky and not have them turn, especially if using the hormone laced 'farm eggs' from the supermarket. Leaving them out for more than an hour or so is bad. Once they hit room temperature, I think it only takes an hour to start building up dangerous levels of bacteria. M |

There is this stuff called "water glass" aka sodium silicate, that you can put them in and keep them on the counter several months. I have done it, and it works. Should be available at your pharmacy/chemist. If you are interested, I'll look up the exact procedure. If you don't refrigerate, you are going to get salmonella, and that ain't fun! |
