So you can get ready made Folkie Burgers in the States. Anybody got a recipe for home made ones? Is the meat better fat or lean? Young or seasoned? Fresh or well hung?

As adjectives for folkies I'd agree that fat and seasoned should be in there. Not sure about well hung though...

The meat is the first consideration. Use extra lean ground beef. Broil it or fry it. For topping you'll need cappicolo forte, purple onion, red relish and some mustard. It is important that the bun be good; that is, the bun should be semi-crusty. I prefer the beef cooked medium.

Forget beef, go for bison. Very lean, and very good. (And around here it's farm raised.) Work some finely chopped onion in and some (very small amount) of smoked ham or bacon fat (bison is VERY lean). Fry quickly, and serve on very good buns with you choice of condiments. You might try melting on a piece of sharp smoked cheddar at the end, too.

This is ALBERTA. We can't forget beef. We also have a bison industry, but it doesn't do half as well as the beef-cattle industry.

Yeah, I know. The cattle and bison all come across the border and give the US cattle and bison dental caries or something. But GWB is gonna fix that, he's gonna make all the Canadian cattle and bison carry passports and go through customs.

It's a dumb idea, though. Some of the customs cattle and bison have are pretty, well...inappropriate for polite company.

or Textured Vegetable Protein or tempeh or tofu.

and the bun should be whole wheat, and there should be
sprouts, and ......hemp seeds.
