I remember one Thanksgiving my {now ex} husband and I ate dinner over a Nigerian friend of ours. Bisi said she was aware that Americans didn't like their food hot, so she made sure to make the food less spicy than she would naturally make it.

HA!

That food was so HOT, I had to gesture for some water.

And to be polite, I had to keep eating the food that had been given to me...

That was a Thanskgiving I will never forget. I learned the lesson then that one person's mild could be another person's very hot-which is another way of saying "Different strokes for different folks".

Having travelled a lot in North Africa I developped a preference for hot spices. When I cooked my family firmly declined to eat my meals.
Once I told my younger daughter that I had put only a few spices on the meal, and left out all the hot ones. She took a spoon and said: "Oh papa, that tastes ... FIRE!"
