Ooo... me now - and for dessert... Rich Fruit Fool 1 Lb gooseberries, apples, blackberries or raspberries 3 tbsp water 3-6 oz caster sugar 12 fl oz double cream 2 tbsp fresh milk red or green food colouring (optional) chopped walnuts or chopped toasted almonds and fruit for decoration 1. Prepare fruit according to type 2. Bring slowly to the boil, cover with lid and simmer until fruit is soft. 3. Remove from heat. Add sugar to taste. Liquidise. Leave until cold. 4. Whip 1/2 pt cream and milk together until stiff,then gradually fold in fruit puree. 5. IF FOOL IS PALE IN COLOUR TINT WITH FOOD COLOURING. 6. Transfer to 4 sundae glasses and chill 7. Before serving, whip remaining cream until thick, pipe whirls on top of each dessert and top with nuts.
