Hi Folks.
I am visiting a Friend in January who because of an Operation is going to be on a soft Diet for a while as he won't be able to chew.
I was wondering if anyone has any ideas for something nice for me to cook that he would be able to enjoy.
Any help would be appreciated.

There's always soup- he might be bored of it, though. There are hundreds of recipes here
just in case he isn't! :0)

How soft does the diet need to be? Could he eat fish, eggs, etc.?
Poached fish and parsley sauce is nice, and is easy to eat...especially with mashed potatoes (with lots of butter in them).
It's easy to make too, just poach the fish in milk, then remove the fish, skim the milk, and add some parsley and cornflour to it and stir until thickened. :0)

Custard pudding is nice- it's cool in the throat, not too sweet, holds its form, easy to make.

Also, how about ommelette? You can make them as simple or as extravagent as you want, with different fillings. Lovely with blue cheese (if you like blue cheese! :0)

And stewed fruit, pureed, with custard, or cream...that's nice.

Jude, you know I don't cook. I am eating a bowl of one of my newly fav. meals, recommended by my acupuncturist...it has lots of good, low-fat protein and all kinds of other things good for the body...AND, you don't have to cook it!: half cup low-fat cottage cheese and half cup plain low-fat yoghurt mixed in with a bunch of fresh or frozen blueberries! It's tasty and easy to get down!

Whatever she has, just run it through a blender or puree strainer first and it will be good. This means even beef, chicken, turkey, fish, etc.

This is a Musician who lives in Denmark, likes his Food and is already freaking out.
I usually cook him some of His favorties when I visit.
Both exiled Scots so you can imagine we dine Traditionally...:>)
All the suggestions sound good so I shall print this out and take it with me for inspiration.

I don't know how long this person needs to remain on this soft diet, but there are some wonderful grains out there you might want to try.

My all-time favorite is called Quinoa. You cook it Half Cup Quinoa to A Cup of Water, like rice. You can first put the Quinoa into a frying pan and turn it a nice golden brown, or just give it a rinse before you add the grain and water together, bring the water to a boil, then on the LOWEST heat possible, cover it and leave it for about twenty minutes. The water is absorbed completely and you are left with the most Delicious Food. I like it with honey on top, but you can also use it as a side dish for any meal.

It's a very healthy grain, and has a wonderful consistancy...like teeny tiny little bubbles of joy. (Hey, it's early in the morning, and I haven't eaten yet!)

Split pea soup, turkey soup, chicken noodle soup, borscht, name your poison on the soup list.

Custards have the advantage of lots of protien (useful when one is healing). Quiche with just about anything in it for a main course, bread pudding for dessert.

Sandwiches--peanut butter or tuna or any kind of chopped meat would work. Careful if the pickles are crisp! :)

brucie has the idea. I was on that kind of diet when I had trigeminal neuralgia. You can puree a whole serve of roast - meat, potatoes, other vegies with gravy or whatever and it tasts fine. Looks strange, but tastes good. Joy

Carrot/ginger soup is good, and very pretty. Carrots and some ginger simmered lightly in chicken or veg. broth (depending on meat eater or not), then pureed with salt, pepper and a dollop of butter, reheated to serve.

Pureed roast beef--I'd have to be pretty hungry to eat it that way. That said, someone on a soft diet might be hungry enough to eat it that way!

A friend made some pumpkin soup and really put some life into it with a dollop of maple butter.   Verrrrry good. (I guess maple syrup would work. Might also be worth a try with carrot soup ...)

I spent a few months earlier this year unable, not just to chew, but to SWALLOW -- thanks to radiation teatment for cancer of the tonsil. My diet was not only soft, but exclusively liquid -- it had to be injectable directly into my stomach through a plastic tube.

Depending upon how much or how little your friend is able to choke down, getting sufficient nutrients may be an issue. If it is a potential problem, I'm sure he knows about the total-meal-replacement liquids available from drug companies, like Ensure and Boost. What you and he may NOT know is that there is a cheaper and much better-tasting alternative that contains all the same required nutrients: Carnation Instant Breakfast.

At first, I was afraid that this might be a US-only product, but recently the label has begun to read "Nestle-Carnation Instant Breakfast," so it is now the product of a multi-mational corporation and so should be available anywhere. It's a powder that dissolves (easily and quite thoroughly) in milk, come in about 8 flavors (half of which are variations of chocolate), and is sufficiently complete nutritionally that you can live on it and nothing else -- if you drink about 8 doses per day.

I sincerely hope that your friend is able to consume a wide variety of soups, purees, etc., and doesn't have to think about liquid meal-replacements. However, if he's unable to process any but a very few foods and is in danger of under-nutrition, excessive weight loss, etc., think about the instant breakfast -- at least as a supplement, if not as complete replacement of all other foods.

I had a series of jaw operations a few years back, and coudn't chew at all. One of my faves was something that might appeal to a Scot -- take a jar of commercial lamb baby-food, and stir in ground thyme, garlic salt, and a bit of paprika. The lamb flavor was pretty accurate, and the spicing dressed it up a bit.

Also, bread pudding goes down well. Two slices of white bread, allowed to dry out and diced coarsely (cut off the crusts first for a true soft diet) will soak up one egg beaten with a half-cup of milk, a bit of sugar and a sprinkle of cinnamon. If you do the mixing gently in a buttered custard cup, drop the bread bits in and let it sit for a few minutes to soak (press the bits under the surface with a spoon or fork) then cover it with plastic wrap, it nukes well.

Use plenty of seasoning to make it interesting, but go easy on the salt. Use other herbs and spices, or don't add extra salt if you use a stock cube ~ those things are mostly salt!

Steam the veggies and puree them in a blender, rather than boil them to mush, that way you get better flavour and don't knacker the vitamins.

If you ask at the hospital, I'm sure the dietician will be able to help you with some nutritious recipes.
