So what is your favourite thing to do with Turkey leftovers?

Tree's favourite is a turkey sandwich, but I can't wait for the turkey biriyani.

Perhaps this should be Folklore and not BS.

Veggie - so don't eat turkey, but my children do, therefore it is turkey sandwiches until sick of them, then no turkey until christmas next year, which by then they don't mind eating it again. BBinge is another word. (I say this because I remember doing the same when I did eat meat.)

To me, the best part of the turkey is the sandwich.

But we had Beef Stroganoff yesterday. Despite the fact that there were eight of dinner, we have lots left over.

Having made an exceptionally strong stock with all the turkey bones and skin [ but not the parson's nose] wait fo r it to cool, skim off the fat. Use any brown meat cut into chunks, some chopped celeriac, and a teaspoon of celery if you have it - if you don't just add a few peppercorns or a good shake of black pepper - then cook the celeriac until tender in some of the stock, add the meat and celery, just cover with stock and heat through. Serve with hot crusty rolls. Doen't taste like leftover turkey but definitley is winter comfort food. You can do this with leeks as well but they tend to go rather thin. If you want to thicken it add any left over mashed potato, rather that flour.

I didn't have very much left over wild boar, I'm afraid, except for a cold collation. The calvados apples were really special.

Didn't have any this year cos we went to the Indian on Christmas Day and it was superb and last night we had bambi steaks...nothing left over except a wee bit of pudding and thats MINE!!!!!

Turkey Hash...best part of the whole christmas dinner thing. Then sandwiches, then soup, then turkey burgers. Then never want to see turkey again until thanksgiving next October.

Bert, what is biriyani?

My fave is the hot turkey sandwich with gravy, seasoned with black pepper. But I only get a small packet of leftover meat to take home after the dinner-for-eleven at my brother's house, and I usually snack on it (cold) in front of the TV before it has a chance to become the middle of a sandwich!

Ham's much easier than turkey to deal with from a leftover standpoint. Slice it for sandwiches, dice it for omelets, throw the bone in a pot of beans.

This year we're trying to make it through the holidays without gaining weight. I HAVE to lose 30+ pounds to make the load on my heart less. Karen has lost 120 pounds or so since the surgery in January and this is no time to fall apart. We're doing shellfish mainly but as far as turkey goes, the only reason I ever make one is for the leftovers, specifically the recipe below and Turkey Pie. I've posted it before but once more can't hurt......much.

I'll give you my favorite thing to do with leftover turkey for a start. Its called Kentucky Hot Brown and was originated at the Brown Hotel in Louisville, Kentucky. There are lots of variants but I guarantee mine is the best you'll ever eat. Its a sandwich, but you eat it with a knife and fork and in a 9x13 you can make 8 at a time, so here's the way to make 8.

BTW, don't cut corners trying to save on fat and calories or cholesterol. I only make this twice a year so what the hell......and when you try to cut back, the dish goes to down the tubes. Just eat and enjoy.

SPAW'S KENTUCKY HOT BROWN

---You will need enough turkey for eight 2-layer sandwiches, preferably sliced white, although dark slices work well too....a matter of taste.

---Start by cooking one pound of bacon in a skillet. Cook soft and don't overcook as you will be baking it later. You need at least 20 strips of bacon

---While the bacon is frying, toast 24 slices of good bread. Use good bread, sourdough is excellent.

---Set aside the bacon strips and now lightly brown the turkey in the bacon grease. Just a bit on the crispy side.

---Set aside the browned turkey and use an appropriate amount of flour, salt, and water to make the grease into a thick gravy. Add a tablespoon of Worcestershire Sauce and a tablespoon of Cayenne Pepper Sauce. Add black pepper and garlic powder to taste, about a teaspoon each. Salt to taste.

---As the gravy cooks, add one package of frozen peas.


YOU ARE NOW READY TO ASSEMBLE

---You will need at least 4 cups of a sharp cheddar, shredded. Also cut your bacon strips in half to divide them up.

---Put a thin layer of the gravy on the bottom of the pan.

---Arrange eight slices of toasted bread on the bottom of the pan.

---Now put a bit of gravy on each slice of bread, then sliced turkey on this first layer, followed by a layer of cheese, bacon strips on each sandwich, then a layer of gravy.

---Put the second slice of bread on each sandwich and repeat what you did on the first layer.....a bit of gravy, turkey slices, cheese, bacon strips, gravy ... and then top with the final slices of bread.

---Cover the top slice of bread with gravy, bacon slices, and then a layer of cheese.

---Bake at 375 for about a half hour and then let stand for at least 15 minutes before serving.


SERVE AND EAT !!!!!!!

Now I gotta' tell you that if this ain't the best damn thing to do with leftover turkey, then I don't know what is!!! Don't scrimp on the turkey or any of the other ingredients. The only reason I cook turkey is to make Hot Brown and Turkey Pie. Enjoy!!!

Having had a bypass myself, you'd think that stuff would have caused it huh? But the day I went in for surgery my holesterol was 144 and has never been higher than 150 whenever tested.

40 years of smoking on the other hand..........................

My doc tells me that 50% of heart attack victims have normal circulating cholesterol levels. I guess the relevant parameter is the amount of plaque deposited on the arterial walls and how that correlates to the circulating cholesterol level.

Yeah bobad........Too much attention paid to the overall number and not enough to the LDL and HDL numbers. Once again though, mine were fine. Cigarette smoke has remarkable ability to destroy arteries as well............

In any case, having Hot Brown once or twice a year won't kill you. There are some recipes that I enjoy redoing with limited calories and fats but on others, there just ain't no way. So a little moderation and things will be fine.

Here is one recipe, but nowadays I just buy a jar of Biriyani past from the Indian store.

My Christmas leftover collection is down to:

1 hambone ready for soup pot. All bits identifiable as ham without use of a microscope have been consumed.

1 small baked potato.

1 small baked sweet potato.

2 bags mixed salad greens. I didn't even know they were in the fridge until ten minutes ago. I guess our daughter brought them.

1/4 of a 7-ounce aerosol can of whipped cream.


Considering that it took some very creative stacking to even be able to close the refrigerator door on Christmas night, I feel a tremendous sense of accomplishment.
