Oh so many things still to try in the world! I can get wild boar, rabbit, hare, pheasant, partridge, duck; even kangaroo and ostrich, and roe deer is our Christmas dinner, but I'd love to try some of the things you mentioned. I have a cookbook I'm fond of, with European peasant recipes, and there is a whole section on reindeer but I've never had a chance to try them

Shucks, I can get elk, deer, moose, bear, and buffalo 'most anytime I want it here. I've got buff in the freezer right now, come to think of it. They sell it every three months or so at the Fred Meyer store. The elk and deer are farm-raised (so are the buffalo) for the speciality meat market. As for moose and bear, I know people who have such in their freezers -- and they're happy to share because, well, there's a LOT of meat on moose....

Was in Saint John's Newfoundland in August for their Folk Festival. Went up to a food concession, looked at the menu and thought why not try a "Moose Sausage". I turn to leave and this fellow says to me "Have you tried my Moose Burgers". I said no I have a sausage from the other concessioner. He then said that at this concession I provide the Moose every year. I said "Really?". He said "Christ, You Main Landers will believe anything". The gentleman I was speaking to was none other than Ron Hynes.
I know some if not most do not know who he is, but do yourself a favor and check him out. www.hynesite.org He is known for the song "Sonny's Dream". However he has written hundreds of great songs.

Actually, I wasn't aware that reindeer with sacred symbols of anything. Is there a religion that worships reindeer? What does that religion do about caribou?

Three guys pass away on Christmas Eve and are met by St.

Maybe they'll market reindeer sausage down here soon. It's very good; I try to eat it whenever I'm in Alaska. Just spicy enough for breakfast!
