It's the amount of natural red that gives the flavor that huge boost! I think perhaps yours is reflecting those great salmon oils in the juice that form a skin* on the fillet and lighten the surface when it has finished cooking. (*The word "congeal" comes to mind, but it isn't my favorite word to describe fine cooking!) |

It has the advantage of lasting longer than fishy baits. This meant that lobsters ingested the hair along with the hide.
