pan dulce (sweet bread)
aguacate (guacamole was called this in Sonoyta, Sonora)
chicken molé
camarón mojo en ajo (shrimp soaked in garlic--I looked up "shrimp," I seem to remember another word used. "Gamba" is prawn, but that doesn't sound like what it was called, either).
galletas (cookies)

How about a few ingredients?

crema media (medium cream, used on lots of dishes)
ajo (garlic)
pescado (fish)
limón (lemon)
huevos (eggs)
especias (spices)
queso (cheese)

I don't remember much of this any more. Used to go to Sonoyta to eat all of the time when I lived at the border in Arizona. I hope you know how to pronounce some of these things when it comes to any rhyming!

I have Kim......including a lot of joints where everyone swears "It's the BEST!!!" And that covers a lot of places including the great southwest. Give me Thai or Vietnamese or Indian anyday.......We go to a few good Mexican places here, but I just don't find it all that great anywhere.

Nixtamal (hominy) for posole.
Atole or Chaquehue and Modelo negro for the sick
Ostiones- Put oysters in a buttered ramekin. Add butter, salt and pepper and lay strips of green chile on top. Bake until the oysters become plump and the edges just begin to curl (10 min. or less in hot oven). Put bread fried in butter on top.

Temole (stew) de chile verde

Spaw, I didn't encounter hot food that often in Mexico. I think it's an American assumption that it's all hot. I didn't go far into Mexico often, I visited the border town of Sonoyta because I lived four miles from there, and 35 miles from the nearest U.S. town (Ajo). Sonoyta was larger and had a better array of restaurants and shops.

I found a nice little review of the beer online:

    A lot of things get lighter in warm weather, and beer is no exception. Who drinks winter lagers in July? Show me a person who strolls into an August heat wave and says, "Boy, a Guinness would hit the spot right about now."

    Which is why, in the universe of Mexican beers, Negro Modelo has gotten short shrift compared to, say, its plain-Jane brewed cousin, Corona. But surprisingly, it's actually a perfect time to break out this crisp, full-bodied beer. It's deeper and more complex than Dos Equis (or Sam Adams), and its malty, slightly chocolate flavor offers the right counterpoint to a spicy mole sauce — or even just chips and salsa — on a humid day. Don't be surprised if it's hard to go back to watery lager afterwards.

Echoing Stilly R S about the heat as you go south. Middle and upper class Mexicans in the central area eat what we call "continental" cooking. Northern Mexican cooking has spread to the south and is found easily in Mexico City, but remains subsidiary to a continental menu and to the old Indian cooking of that region.
We found an excellent French restaurant in Tapachula, in western Chiapas (it was not a tourist town). There also is a place there that does great things with a mixer- all kinds of fruit, ice cream, etc. blended and served like milkshakes. The tables bordered their fine plaza and were great for people watching.
One night the entertainment was at the police station on the corner of the plaza near us. Two young men had wrecked a borrowed car and damaged property. The parents, the owners of the damaged property and the car, and the boys were all there. The procedings were relayed to the plaza by word of mouth. A Mexican couple we were with translated. To cut to the end (about 2 hours of back and forth arguments), the fate of the boys was determined. They had (with their parents, I presume) to pay for the damages, and would have to repair the damaged property (a wall, etc.). It was a most civilized way of settling the affair.

I like Modelo negro. The waiter at one place (also in Chiapas) became sympathetic and inquired about my health. The Modelo was not with the rest of the beers but was brought from the cafe section, and I found out that it was often ordered by people who had upset stomachs or were recovering from illness. That's why I put Modelo and atole (gruel) together in the list.

'axolotl and orange' for some reason it didnt appear in the best loved mexican food listhere though!!

Axolotl perhaps is more common in Mexico as ajolote. I presume you are referring to the salamander.

Orange in naranja, naranjo. The color is anaranjado. J pronounced like 'H'.

If I understand you correctly, you've got a job cut out for you to rhyme with orange...the one color in the song Jenny Jenkins that just about everyone avoids..."No, I wont wear orange, cause it's too....pornge? fornge?

Ah, the Margarita!

1 1/2 gallons tequilla
1 gallon fresh lime juice
1/2 gallon Bols triple sec
(Wimps read gallons as ounces)
Rub rim of glass with lime, dip in kosher salt.
Shake tequila, lime juice and triple sec with ice and strain into the glass. Garnish with 1/4 lime

Or- one ounce each tequila, triple sec and lime juice (a little too sweet).

Don't know which is the original recipe. Some prefer it on the rocks rather than strained. Lots of variants.

no the challenge doesnt allow you to turn the phrase around Mudlark - you have to use it exactly as it is givn to you - the trick is to add something on the end so that you dont have to rhyme with orange like

'axolotl with orange, char grilled or fried'
Such delicacies never tried
etc.

words that almost rhyme with orange are acceptable too like compinge or infringe or lozenge ( I come from Yorkshire so my accent means they rhyme with orange!!)

My opinion on Mexican food is the same as 'Spaws yet most of my friends here in Oz reckon its great.

I fell into an sewer once in Singapore ( yes I was pissed ) and the similarity with Mexican tucker was extraordinary.

Its a fallacy that all those Mexicans are risking limb, life and the law in crossing the Rio Grande for better economic conditions.
They're doing it to get away from the boring shit they have to eat.
