Time for an Easter Dinner thread for 2007. What do you all plan on cooking?

Last year my plans went awry because I fell ill. All I managed was a spicy carrot souffle. The Ham wound up being carved into several other dinners.

This year I plan on making:
Lemon & Thyme Roast Stuffed chicken (BIG chicken!)
Saffron rice with dried cranberries & almonds
Brussel sprouts with pancetta and Ritz Cracker crumbs (very buttery crackers, yum)
More of that Parmesan Carrot Souffle from last year (it worked out so well)
Southern style greens with pickle juice
(sounds awful but taste great, you steam up some collard, kale and mustard greens, toss them with some garlic/dill or sweet pickle juice)
Stilton & Walnut scones
Cheddar biscuits (american style biscuits)

for Dessert:
Peach-Blueberry Fool
and
Twinkimasu (Tiramisu made with twinkies, don't knock until you've tried it)

Same here, with hot cross buns and Easter Eggs on Sunday.

A meal at Spaghetti Junction is a must, and another night will be curry night with Black Joak Morris. There are so many lovely things to choose from on the stalls, there aren't enough days to try them all. Then there are snacks like the Italian chocolate and the poffertjes (little Dutch pancakes)... Oh dear, you've got me drooling now Sandra, and it's all your fault.

It'll be a little turkey or a domestic goose if we can find one. If turkey, my husband's favourite sage and savoury flavoured potato stuffing. Baked squash, turnip, peas, carrots and cranberry sauce from berries I picked in October. Yum.

Friends of our's who always host the Easter feast have been toying with the idea of a spit roasted lamb for years. I sent them George's recipe for inspiration and it looks like this year is going to be it. I am looking forward to it and hoping that no shooting of roof tiles will be involved.

thanks for the reminder about the hot cross buns. The Baker's Catalogue sells a complete kit for making them and they always come out right when I use it. I put in an order for two kits and had some sent to my mother as well. Where she lives now she is at least 60 miles from the nearest bakery.

Of course hot cross buns should, technically, only be eaten on good Friday but since they sell them in the shops all year round here now its a bit of a joke. We will be at glorious Miskin so dinner will be something from the kitchen window.

I grew up with a lapsed Church of England mother and a lapsed Greek Orthodox father, and we had 2 Easters, the "regular" one essentially being a big chocolate feast and the Orthodox one a huge, elaborate Greek feast. Every so many years they fall on the same day (as they do this year). As an adult I have always hosted the latter at my house, and since my dear father passed away in February, it will be an extremely bittersweet occasion, especially as both his and my birthdays fall in that same week. That said, it will also be an occasion on which all of his children and grandchildren can be together and eat what was always his favourite holiday meal of the year, and he will surely be with us in spirit.

So, the menu:

Roast leg of lamb with olive oil, rosemary, etc.
Rice and orzo pilaf
Roasted potatoes (cooked with the lamb)
Greek-style green beans (onions, tomatoes, LOTS of garlic)
Huge Greek salad
Home-made bread
Spanakopita
Olives, feta, hummus, tsatsiki, etc.

All washed down with lots of red wine, followed by my mother's baklava (which my middle son describes as "the essence of goodness") and birthday cake for dessert. Then we need to lie down for awhile, although the hardier among us might go for a walk! I'm basically a vegetarian, but this is one of those meals when all bets are pretty much off in the name of tradition.

Hmm, 's funny innit? I was dragged up catholic, but easter sunday dinner was just a normal sunday roast. The big thing was the chocolate easter eggs.

And I always liked the hymns we sang at mass. Our church always had a long service for easter sunday so there were lots of hymns to sing. Me all over really, don't care if I can sing along.... *G*

Easter is always celebrated on the first Sunday after the first full moon following the spring equinox so next year it will be just about the earliest it can.

We're having prime rib of beef - not traditional, maybe, but very nice. With horseradish mash, stuffed mushrooms, and maybe a few leeks.

Still not sure about pudding. Maybe pavlova, but I've got such a kick-arse lemon merengue pie recipe...

I like it when Easter is early. The Canberra nights are not QUITE as chilly (slightly earlier in Autumn). In 2000, it was almost as late as it can be (April 23) and that was the year we had all the frost and extremely cold nights, so a few weeks can make a difference to the weather there.

I see that in 2011 it will be April 24, so it's likely to be another chilly National in Canberra. It's been a long time since I've been home for Easter - I wouldn't miss that festival for quids - so it's always festival food at Easter for us.

Refreshing thread so I can hear delightful descriptions of upcoming Easter feasts.\\

Just to get you all going, tonite I made Peruvian Chicken with Plums since I had a big box of golden plums that were ripe and going uneaten. it's basically stewed chicken with tomatoes, sweet peppers, peeled plums, peeled tomatoes, onions, spices, served over savory rice.

Marinated and grilled steaks, grilled asparagus, garlic bread, grilled veggie kebabs for my vegan husband, and, hmm, now that someone's mentioned lemon meringue pie, does anyone out there have a Splenda recipe? Otherwise homemade rhubarb & grapefruit sorbet, which is actually just about as good as it can be.

But what we really look forward to about the easter season is Greek fish stew (psarosoupa), which we always have on Good Friday.

Is it the table-type Splenda? Because they claim you can use it "just like sugar" in normal recipes. (I can't tolerate the taste of it, myself, but theoretically it should bake the same.) America's Test Kitchen had a good lemon meringue pie recipe on their website.

i was inviged to join my daughter's inlaws...they are from Guam
and often eat finnidenni which seems to be a sauce made of tamari
soy sauce with chopped peppers and other stuff

SAUCES
Finadeni

No island feast would be complete without finadeni. This terrific sauce used to flavor rice, soups and is excellent for marinating chicken, beef and pork. Make a lot at once and store the extra in a salad dressing carafe for easy use later.

    * 1/4 cup soy sauce
    * 1/4 cup lemon juice
    * 1/4 cup chopped green onions
    * 1/2 tsp. crushed red pepper, or 3 small red peppers,       roasted    and chopped

Combine ingredients, stir.

they speak chamorro--when i asked about the sauce
they called it "fine and dandy"

I made brown rice and vegetables and tofu with curry.

there was also turkey and ham but i do not eat these..

I had the very bestest Easter Sunday scoff I have had in over twenty years! Mum was not feeling well and it was snowing and blowing a clip so we stayed home. She had a light supper at her place and I had some beers and watched the hockey and curling at my place. And the rest of the family had whatever they had a their place... over at their place... where I wasn't... >;-) DEEEElicious!
