Last year my plans went awry because I fell ill. All I managed was a spicy carrot souffle. The Ham wound up being carved into several other dinners. This year I plan on making: Lemon & Thyme Roast Stuffed chicken (BIG chicken!) Saffron rice with dried cranberries & almonds Brussel sprouts with pancetta and Ritz Cracker crumbs (very buttery crackers, yum) More of that Parmesan Carrot Souffle from last year (it worked out so well) Southern style greens with pickle juice (sounds awful but taste great, you steam up some collard, kale and mustard greens, toss them with some garlic/dill or sweet pickle juice) Stilton & Walnut scones Cheddar biscuits (american style biscuits) for Dessert: Peach-Blueberry Fool and Twinkimasu (Tiramisu made with twinkies, don't knock until you've tried it) Anyone passing through los Angeles is welcome to stop by |

There are so many lovely things to choose from on the stalls, there aren't enough days to try them all. Then there are snacks like the Italian chocolate and the poffertjes (little Dutch pancakes)... The Baker's Catalogue sells a complete kit for making them and they always come out right when I use it. I put in an order for two kits and had some sent to my mother as well. Where she lives now she is at least 60 miles from the nearest bakery. |

From: Desdemona Date: 16 Mar 07 - 12:08 PM I grew up with a lapsed Church of England mother and a lapsed Greek Orthodox father, and we had 2 Easters, the "regular" one essentially being a big chocolate feast and the Orthodox one a huge, elaborate Greek feast. Every so many years they fall on the same day (as they do this year). As an adult I have always hosted the latter at my house, and since my dear father passed away in February, it will be an extremely bittersweet occasion, especially as both his and my birthdays fall in that same week. That said, it will also be an occasion on which all of his children and grandchildren can be together and eat what was always his favourite holiday meal of the year, and he will surely be with us in spirit. So, the menu: Roast leg of lamb with olive oil, rosemary, etc. Rice and orzo pilaf Roasted potatoes (cooked with the lamb) Greek-style green beans (onions, tomatoes, LOTS of garlic) Huge Greek salad Home-made bread Spanakopita Olives, feta, hummus, tsatsiki, etc. All washed down with lots of red wine, followed by my mother's baklava (which my middle son describes as "the essence of goodness") and birthday cake for dessert. Then we need to lie down for awhile, although the hardier among us might go for a walk! I'm basically a vegetarian, but this is one of those meals when all bets are pretty much off in the name of tradition. Hippity hop, ~D |

I was dragged up catholic, but easter sunday dinner was just a normal sunday roast. The big thing was the chocolate easter eggs. And I always liked the hymns we sang at mass. In 2000, it was almost as late as it can be (April 23) and that was the year we had all the frost and extremely cold nights, so a few weeks can make a difference to the weather there. I see that in 2011 it will be April 24, so it's likely to be another chilly National in Canberra. It's been a long time since I've been home for Easter - I wouldn't miss that festival for quids - so it's always festival food at Easter for us. |

Make a lot at once and store the extra in a salad dressing carafe for easy use later. * 1/4 cup soy sauce * 1/4 cup lemon juice * 1/4 cup chopped green onions * 1/2 tsp. crushed red pepper, or 3 small red peppers, roasted and chopped Combine ingredients, stir. they speak chamorro--when i asked about the sauce they called it "fine and dandy" I made brown rice and vegetables and tofu with curry. there was also turkey and ham but i do not eat these.. |
