Esteemed BOSS Santa,

I most humbly apologize for not responding much sooner to your latest communication. Let me wish you a very Happy Santa Lucia's Day in return, then. That's one of the "big days" in the Scandinavian countries and will be celebrated in two days' time, on 13th December with kids walking in procession and singing.

I shall be looking forward to your present, and I shall keep watching the skies - as best I can, the clouds are hanging very low today. And with little furry standing to attention nearby both eager and happy to help out with getting rid of any unwanted evidence.

I do my best to be good, esteemed BOSS, as always!

Reverent greetings,

Bente

It has been in the post for a week now. You should get it soon, if your elves are not too busy.

Remember, purple you can open. Blue and green, wait for the day.

OOh, Bente - I think you got the perv! Mind you, if you have a little furry standing to attention, I'd say you were pretty well matched!

There's a new thread lurking above the line (though I daresay a well-meaning elf will drag it down here where it belongs soon) for those who have received their presents - posting there will help keep this one to a manageable length and hopefully not make anyone too jealous.

I wonder what happened to my two... are they still arguing about who is sending me what or have the elves been put on probation?

Did they now? Well, that was decent of them, wasn't it? All part of the great plan, my Dear. I figured that that way you'd get a bigger collection of fridge magnets, and with unique specimens, too.

There was an extra bag of spare magnets and glue in the box, wasn't there? So, you just grab them as they come, glue a magnet on the back of them and hang them on the fridge alongside the others, and voìla..

There was such a bag in the box, wasn't there?? I instructed.... JINGS!! I just remember WHO was put in charge of that task... Well, Dear, if the bag wasn't in the package, please let me know, and I shall make certain that said elf will not have time for more mischief for a good while to come. We still have lots of peedie bits to count and bag, and I'm sure I can find other tasks of a similar nature for him once he's finished that. I can assure you that such inattention to detail will not go unpunished, my Dear!

The best-laid schemes o' mice an' men gang aft agley.. I shall make sure that the missing items are dispatched to you with the last consignment, no doubt about that. In the meantime play for time. Tell them to come back later and whatever it takes, I'm sure you can do that, I have every confidence in your resourcefulness, my Dear.

Dear Silenus Charm, Santa's Crack Research Elf:

So sorry to be away from thsi thread. I've been busy cooking. Over Thanskgiving holidays I made a huge batch of my very best Never-Fail Cranberry Sauce and put a bunch of it up in jars. I was also busy boiling down Pyracantha berries to make my first ever batch of Firethorn Berry Chili preserves. After a lot of trial and error, I believe I have perfected the recipe.

I did indeed get the Tar Heel pie recipe postcard and it was magnificiant! I do hope to bake one up soon. Today am occupied with a bread pudding. I cubed a stale loaf of Cinnamon bread 3 days ago and really need to get the custard made and over those bread cubes before they become bird food! I meant to do it yesterday but I was distracted by a small rack of lamb my husband wanted for dinner.

Colors I might like - as you know, NO ORANGE. I'm not a big fan of primary colors either. My Cottage was just painted a lovely cape cod blue if that helps you out at all. It looks lovely but now I have to redo the front gardens that line the fence. Yellow & white Aliums just won't do any more. At least I can consider putting in some pink and lavendar flowers now.

I would very much like Mrs. Claus' Chess Pie recipe. if she happens to have one for Lemon Chess Pie, so much the better! I saw an item in a catalog from Virgibnia Tradtions (they sell hams and such) and it was a combination of a lemon chess pie and lemon cheesecake! Can you imagine such a thing?? Yummy. It seems they use a deep dish lemon chess pie base, fill it halfway and bake it some, then return it to the oven topped off with the cheesecake filling. That's a pie I would risk making for sure.

Tonite I have to figure out what to do with several pounds of frozen Perch filets. My Mum suggests frying them but that's boring. I'm thinking of making them in a casserole like escalloped potatoes and sliding the filets in between layers of potatoes and sweet onions. add in some greek yogurt or sour cream, some parmesan, a little milk and then top with butter cracker crumbs and more parmesan cheese.

Do you or any of the other elves think this is a good idea? I may not get around to trying this until tomorrow since I still have leftover Lamb from last nite. I think Dave (my husband) won't mind having rack of lamb leftovers especially since I managed to find a six pack of Asahi dry in bottles at tarder Joes. For the longest time they only had cans. Blech! Asahi in bottles is sublime and even better when paired with rich food since it's so crisp and clean tasting.

So, that's all from me. I hope the reindeer are well. My favorites was always Comet. Please give his ears a nice scritching from me and tell him I think he's the top! I know every always goes for Rudolph or Donner (his dad so they say). Me, I always heard Comet was the best sleigh puller and that he has amazing sense of direction.

Best wishes

Dave'sWife

Dear Dave'sWife,

The perch idea sounds not entirely like Jansson's Temptation, which is a traditional Christmas season dish in Sweden, not too far from here. (The way the wind is blowing today, I can almost smell the anchovies!) There's an article, and a link to a recipe, here. It is a wonderful dish, but you have to like anchovies.

So, perhaps you could adapt that recipe, except of course perch is very mild...maybe perch and anchovies? Another potential problem is that the perch might add too much moisture, but if you put it in a separate layer on the bottom and added breadcrumbs, maybe it would be OK...not sure; Mrs. Claus is not Swedish and, anyway, doesn't have any experience with perch.

Good luck! Let us know how it comes out, whatever you do. Mrs. Claus is copying some recipes for you as we speak. Good thing the reindeer are expert at fast deliveries.

Comet says hello, and do you have any fresh lichen? He loves fresh lichen even more than I love Jansson's Temptation.

Regards,
Silenus Charm

Dear Silenus Charm,

What a helpful elf you are. yes, that recipe is very similar to what I had in mind for my perch filets. Instead of the cream, I'll use Greek Yogurt which is very thick - almost like butter. Layered with the Onions and potatoes and cracker crumbs it ought to come out very much like the Jansson's Temptation. I think I will save this dish for closer to Christmas proper seeing as it's a traditional holiday dish. I like to use Ritz Cracker crumbs mixed with some regular breadcrumbs because they are so decadant and melt in your mouth.

Since you've been so helpful, perhaps you can suggest a nice dessert to go with it? I looked at the Saffrom cake but it didn't appeal to me. Maybe I'll make a Pavlova or individual spongecakes with spiced pears. I got a huge box of pears from fruit of the month club and I'm always trying to find something to do with them.

I'm afraid I'm short on fresh Lichen. Is there anything else that Comet might like to nibble on when Santa passes through the neighborhood? Do reindeer eat Pyracantha berries? They're in the apple and rose family and birds and bears love them. Just tell him to spit out the seeds since they're not good for you. I have a huge Firethorn bush/tree in my side garden next to the chimney. he could probably snag a mouthfull without even having to make a stop!

Believe it or not, I still have s stand of sunflowers that the birds haven't totally picked clean and while the stalk are all dried up, the seedheads are still intact (well some of them anyway). I don't know if there'll still be some at Christmass, but Comet is welcome to have a munch. They are conveniently located next to the Chimney also. Does he like Moss? I Have a nice soft bed of moss in one corner of the side garden and he can have that too if he likes.

I'll have to do some research and see about planting some reindeer friendly food sources for next year. The past few years, I've been trying to see to it that the Monarch butterflies have something to eat when they get here. There used to be Milkweed all over the neighborhood but when we put a new fence in, the landscaper tore all of our milkweed out. It's s shame too because it's the one plant the Monarchs love the most and utlize in every stage of their life cycle.

I had mercy on the ground bees this month and permitted my huge basil bush to go completely into flower. Usually I pinch off the buds all the way thru winter so I can have a supply of fresh basil for pesto and margherita pizza . However, after seeing how much they loved the delicate white basil blossoms, and how they'd fight me for them as I tried to pinch them off, I decided to give them the entire bush for Christmas and they're loving it!

In spring, I'm hoping to convince my husband to help me get serious about putting in a reised bed for sweet peppers, salad greens and a few tomato plants. if he won't cooperate, I think I'll have to buy those Earthboxes and grow our salads on the side porch along with the citrus trees I'm hoping get for Christmas. I'm tired of paying so much for Red bell peppers and lemons. TIme to grow my own.

Well, I'm off to go trim some lavendar for a sachet and see what I few basil leaves I can grab before the ground bees get mad at me for raiding their lunch table.

If I had a surfeit of pears, I would surely poach some of them in port -- or failing that, in Stone's ginger currant wine.

I am afraid I am not as conversant as I could be with Scandinavian desserts. I think I would be tempted to have a warm fruit compote of some kind after a dish as rich as Jansson's temptation, possibly with some shortbread on the side. I wonder if shortbread would be good flavoured with saffron? Or possibly it would be better to use cardamom, which is of course also much used in Scandinavian baking.

I only just got your parcel sent out. I intended to get it to you by this time, but those reindeer have been giving me problems. At first I thought they were just to fat to get into harness easily (global warming gave them more reindeer moss, so they've put on a few), then I thought they weren't pulling from the spavin. Nope, it turns out they had the pip! A light case, luckily, but who thought that even flying reindeer could get an avian disease? Well, they're on the mend, but that wasn't going to help your case, so I took it to the post office today. It should get there by Christmas, but the clerk said that yesterday was the last _recommended_ day to send it out in time. We'll see. Your loving Secret Santa

So, Tabster ol' girl, your pressies haven't gone out yet. And it might be even a couple of days after Christmas, because those stupid lazy wonderful elves are working night and day to load ol' Santa's sleigh. In fact, some mediocre boys and girls aren't going to get their presents on Christmas morning because I'm keeping them all! because of Santa's computer breakdown.

Buck up, old girl! Chin up and all that rot! Just relax and think of England!

I hope your reindeer 'pip' wasn't the same as the 'pip' my mother told us we'd get if we sat on the cold ground or a brick wall...

She never could explain to any satisfactory degree just exactly WHAT the 'pip' was, but that's because it would have involved the use of the word 'bottom' and my mother was way beyond reluctant to mention any body part that had to be covered with underwear.

Consequently, after years of sitting on the cold ground or walls, I could have the 'pip' and not know it... or it may just be piles.

*sniff* I understand, Santa. *gulp* I'll do my best to be brave. *sob*
It's just, you know, when everyone else is receiving theirs and mine is *snurfle* still not here ...but I know you're doing your best....

I fear my santa has come to an unfortunate end. He posted once, months ago, asking about my presence. I responded, several times. Never have heard from him again.   I fear he may have come to an untimely death. Perhaps a sleigh accident during one of the recent winter storms? My condolences to his elves.

How are you my merry muffin? You've not said yet if you've received your parcel. I sent it via the UK office, or Secsy Liz as it's otherwise known. If she hasn't sent it on, I shall be down her chimney and take all her chocolate.

Da BOSS

The chocolate is safe, I sent it on as required!

Please don't take my chocolate... I've had some of those bars for days now....

Pleeeeeeeeeeeeeeeeeeeeeeeeease, bfdk, please tell Da Boss to leave me alone...

Worried

Ah... that's a pity, I just posted to the other thread that my present has, indeed, been received here.

It might otherwise have been interesting to watch the battle of the titans or Secsy Liz versus Da BOSS. On the other hand, depriving Secsy of her chocolates may have been more than London could have handled. I mean, piercing, ear-splitting screams of despair leaving East London with as many shattered window panes as the Blitz did, and right before Christmas, too? Nah.. on second thought, that's probably not such a good idea!

Esteemed BOSS Santa, I *have* received your present for which I humbly and reverently thank you! If you can find another reason for depriving Secsy of her chocolates, please go ahead and do so, but leave me out of it, I won't be held responsible (either).. :o)

Best wishes,

Bente

I have a present under my tree!!

I felt like a little kid when that envelope marked "Royal Mail" arrived the other day. Royal Mail! For ME!?

Since you signed your name, Barb'ry, am I allowed to tell?!

.... must wait to open.....
..... must wait to open......
....... must wait to open ......

Where are the cookies?! That will distract me for a while.

Thanks for the joy, dear.
