I've been busy cooking. Over Thanskgiving holidays I made a huge batch of my very best Never-Fail Cranberry Sauce and put a bunch of it up in jars. I was also busy boiling down Pyracantha berries to make my first ever batch of Firethorn Berry Chili preserves. After a lot of trial and error, I believe I have perfected the recipe. I did indeed get the Tar Heel pie recipe postcard and it was magnificiant! I do hope to bake one up soon. Today am occupied with a bread pudding. I cubed a stale loaf of Cinnamon bread 3 days ago and really need to get the custard made and over those bread cubes before they become bird food! I meant to do it yesterday but I was distracted by a small rack of lamb my husband wanted for dinner. Colors I might like - as you know, NO ORANGE. I'm not a big fan of primary colors either. My Cottage was just painted a lovely cape cod blue if that helps you out at all. It looks lovely but now I have to redo the front gardens that line the fence. Yellow & white Aliums just won't do any more. At least I can consider putting in some pink and lavendar flowers now. I would very much like Mrs. Claus' Chess Pie recipe. if she happens to have one for Lemon Chess Pie, so much the better! I saw an item in a catalog from Virgibnia Tradtions (they sell hams and such) and it was a combination of a lemon chess pie and lemon cheesecake! Can you imagine such a thing?? Yummy. It seems they use a deep dish lemon chess pie base, fill it halfway and bake it some, then return it to the oven topped off with the cheesecake filling. That's a pie I would risk making for sure. Tonite I have to figure out what to do with several pounds of frozen Perch filets. My Mum suggests frying them but that's boring. I'm thinking of making them in a casserole like escalloped potatoes and sliding the filets in between layers of potatoes and sweet onions. add in some greek yogurt or sour cream, some parmesan, a little milk and then top with butter cracker crumbs and more parmesan cheese. Do you or any of the other elves think this is a good idea? I may not get around to trying this until tomorrow since I still have leftover Lamb from last nite. I think Dave (my husband) won't mind having rack of lamb leftovers especially since I managed to find a six pack of Asahi dry in bottles at tarder Joes. For the longest time they only had cans. Blech! Asahi in bottles is sublime and even better when paired with rich food since it's so crisp and clean tasting. So, that's all from me. I hope the reindeer are well. My favorites was always Comet. Please give his ears a nice scritching from me and tell him I think he's the top! I know every always goes for Rudolph or Donner (his dad so they say). (The way the wind is blowing today, I can almost smell the anchovies!) There's an article, and a link to a recipe, here. It is a wonderful dish, but you have to like anchovies. So, perhaps you could adapt that recipe, except of course perch is very mild...maybe perch and anchovies? Another potential problem is that the perch might add too much moisture, but if you put it in a separate layer on the bottom and added breadcrumbs, maybe it would be OK...not sure; Mrs. Claus is not Swedish and, anyway, doesn't have any experience with perch. Good luck! Let us know how it comes out, whatever you do. Mrs. Claus is copying some recipes for you as we speak. Good thing the reindeer are expert at fast deliveries. Instead of the cream, I'll use Greek Yogurt which is very thick - almost like butter. Layered with the Onions and potatoes and cracker crumbs it ought to come out very much like the Jansson's Temptation. I think I will save this dish for closer to Christmas proper seeing as it's a traditional holiday dish. I like to use Ritz Cracker crumbs mixed with some regular breadcrumbs because they are so decadant and melt in your mouth. Since you've been so helpful, perhaps you can suggest a nice dessert to go with it? I looked at the Saffrom cake but it didn't appeal to me. Maybe I'll make a Pavlova or individual spongecakes with spiced pears. I got a huge box of pears from fruit of the month club and I'm always trying to find something to do with them. I'm afraid I'm short on fresh Lichen. Is there anything else that Comet might like to nibble on when Santa passes through the neighborhood? Do reindeer eat Pyracantha berries? They're in the apple and rose family and birds and bears love them. Just tell him to spit out the seeds since they're not good for you. I have a huge Firethorn bush/tree in my side garden next to the chimney. he could probably snag a mouthfull without even having to make a stop! Believe it or not, I still have s stand of sunflowers that the birds haven't totally picked clean and while the stalk are all dried up, the seedheads are still intact (well some of them anyway). I don't know if there'll still be some at Christmass, but Comet is welcome to have a munch. They are conveniently located next to the Chimney also. Does he like Moss? I Have a nice soft bed of moss in one corner of the side garden and he can have that too if he likes. I'll have to do some research and see about planting some reindeer friendly food sources for next year. The past few years, I've been trying to see to it that the Monarch butterflies have something to eat when they get here. There used to be Milkweed all over the neighborhood but when we put a new fence in, the landscaper tore all of our milkweed out. It's s shame too because it's the one plant the Monarchs love the most and utlize in every stage of their life cycle. I had mercy on the ground bees this month and permitted my huge basil bush to go completely into flower. Usually I pinch off the buds all the way thru winter so I can have a supply of fresh basil for pesto and margherita pizza . However, after seeing how much they loved the delicate white basil blossoms, and how they'd fight me for them as I tried to pinch them off, I decided to give them the entire bush for Christmas and they're loving it! In spring, I'm hoping to convince my husband to help me get serious about putting in a reised bed for sweet peppers, salad greens and a few tomato plants. if he won't cooperate, I think I'll have to buy those Earthboxes and grow our salads on the side porch along with the citrus trees I'm hoping get for Christmas. I'm tired of paying so much for Red bell peppers and lemons. TIme to grow my own. Well, I'm off to go trim some lavendar for a sachet and see what I few basil leaves I can grab before the ground bees get mad at me for raiding their lunch table. |
