Subject: chili w/o the musical fruit From: paddymac Date: 04 Jun 01 - 05:37 PM Got a terrible itching to make a pot of chili this afternoon. It's smelling good, with garlic, basil, cumino, chili powder, cilantro, salt, onions, and a fresh herb I can't remember the name of. I want to say "chicate", but not at all sure that's anywhere near correct. It's leaves from a shrubby plant that is commonly used in Mexican chili. I can't get my head back to music until I either remember or somebody can help me with the name of that herb. Help. Oh, yeah, ya'll are welcome to drop in for a bowl of the stuff. |

(Worse luck, I'm off of all capsicum-family peppers for about a month; otherwise, I'd ask you to send us a bowl here in Northern Cal! I can almost smell it from here...) |

Subject: RE: BS: chili w/o the musical fruit From: Peg Date: 05 Jun 01 - 02:23 AM I make chili with ground turkey... saute chopped onions and garlic in olive oil, brown the meat, add pureed tomatoes and kidney beans, then chili powder and other spices (I forget which ones). Simmer for a long time, then serve with fresh crusty bread and grated jack cheese on top. Oh, and good beer (Sam Adams Cream Stout perhaps) (I am a bit of a wuss when it comes to spicy food so forgive the lack of authenticity in this recipe; but I am proud of myself for even cooking it since when I was a kid Mom had to make a separate batch of beanless chili for me as I would not eat beans!)

I had bought a plant at a flea market and just stuck in a sort of out-of-the-way spot out back, and forgot about it, till the urge to make the chili came on me. Photo and all- Epazote. First time I recall using it. It adds a nice flavor. I got it out of the fridge earlier, and added another ingredient I overlooked yesterday - chopped green chilies (the mild variety). That seemed to bring it all together. Of course, just sitting in the fridge overnight didn't hurt either. Best thing about it - it's on the diet, with very low carbohydrates. Looks like I've got about a two-day supply, if my back-at-home lad doesn't find it first. Thanks to all. |
