I feel I must make this clear (irony warning).

I read a thread on Mudcat about breadmakers. I am not the type to be influenced by such ramblings. The fact that after reading the thread I bought one (Morpy Richards stainless steel) was purely coincidental.

I was probably going to buy one anyway. I feel the need to say that despite the ravings about how nice it is to wake up to fresh hot bread and taste the subtle flavours of the delicate mixture of yeast and organic flour (when juxtaposed with the tangy , dark friuts of home made preseve set against the aroma and flavour of Java blend coffee) I would still have bought one on my own cogniscence.

Mudcat and the thread therof in no way assisted or prompted my purchase.

Just thought I would share this with you.

P.S. Mine also makes cakes and jam!!

NO! Mudcat has NO influence on my life whatsoever!! Of course, I would have driven to Aurora during rush hour to see Seamus anyway. The fact that I had never heard of him Before Mudcat is totally irrelevant. I KNOW I would have set up a meet in Cheyenne among people I had never met, even if Mudcat was not in my life!

And, I would still spend hours searching for obscure lyrics for total strangers, I just wouldn't have anyplace to post them, LOL!

Well, other than meeting fine new folks, learning HOW to do a blue clicky, (after having coined the term) discovering that I have verbal diahrrea when I get behind a keyboard, and that I'm MUCH more easily distracted by this forum, when I'm trying to work, than I could ever have imagined....I've not been influenced at all...

.....except for that Gawd-damned (and expensive) meat-smoker that DOUG R. went on and on about!

Where did I miss this particular thread? I been smokin for years and there ain't nothin' like it! I don't know which one you have, but if you don't get into it, you're just not right! I have a bunch of applewood all ready for my next load.....Generally two chickens, a turkey breast, a pork shoulder, and a beef rib roast. Use oranbes and grapefruit in the steamer pan along with your favorite smokin wood and you'll be eatin high on the hog!!! Makes great jerky too......Waynes smokin some deer jerky right now!

Morticia, a meat smoker is a covered cooking device that smokes meats. Instead of going to a specialty market or deli, you can make smoked turkey, ham, etc. at home.

hmmmmmmmm.......methinks I should visit a few of the local vineyards during trimming time and collect a few bundles for 'catter with smokers. They charge an arm and a leg for vine trimmings in the gourmet catalogs.

I bought a smoker at a yard sale 2 years ago (brand new, for something like $30), and haven't used it yet. I think it's traditional in the northeast US to wait until the power goes out in the biggest snowstorm of the year, and then cook outdoors. Has anyone ever tried salmon? What other woods, besides hickory, mesquite and apple? Am I creeping the thread?

I did NOT buy that guitar because I'd listened to Mudcat guitar nerds talk INCESSANTLY about their "babies," listened to them play or made a friend of one of them and asked "should I buy it?" when I know perfectly well he can't even say no to HIMSELF.

I have never purchased a kitchen appliance because of discussion here.

jeri - grape vine (especially from the european wine grapes), pear (sometimes sold as "fruitwood"), alder. Juniper berries can be used in moderation- often recommended for use with a "neutral" wood. Likewise clippings of thyme and rosemary can be used in a smoker - again - usually recommended for use with a "neutral" wood.

Of course I've never figurd out what is meant by a "neutral" wood. Oak perhaps?

I know the softwoods are NOT used...and I know one guy who swears by chips of old sherry casks.

GUEST, OK - I'll admit that I would never have even thought about a guitar if it weren't for Mudcat. I'm enjoying it very much though, and thanks to discussions here about quality and Rick's much-appreciated advice, I got a good one.

I'm not buying a bread machine though, and you can't make me.

(What really gets me is when folks start talking about food. I wind up with cravings and have to buy/cook/eat whatever's being discussed.)

On a serious note (please forgive me), I am far more tolerant of gun owners now than when I came to this forum. Why? I read closely what several Catters said (people I'd grown to respect) and felt they made some good points. Not EVERYONE of course....and I still think the NRA should stick their commemorative bullets up Charleton's ass, but in general, I've changed a long-held position on that issue because of the Cat.

I use good charcoal for the heat base and then add the flavoring woods, soaked down to increase their smoke and longevity. Personally, I get a kick out of trying combinations and though it's popular, I have never cared for mesquite. I have easy access to both pear and apple and I like them both. A lot of people only use the steamer pan for occasional use, but I fill it with seasoning things, mainly fruits.

My absolute favorite though is a mix of oranges and apples in apple juice over a hickory and apple fire. And my favorite meat is beef. With turkey things can become almost so strong as to be acidic and frankly pork just kinda turns to ham (surprise!). But a good beef roast has a stronger flavor on it's own and will take a lot of smoke. The results are heavenly. Whole chickens are great too and you can do them in about half the time of beef.

8 or 9 years ago, Wayne and I started to build an actual smokehouse in my backyard but got hung up on lining the smoke tunnel and fortunately the weather changed and the following year, so did our lives. What the hell we were thinking about is beyond me....How many idiots do you know living in a town that build a smokehouse? Serious insanity. Maybe next summer we'll start again.........

We smoke a lot, turkeys, salmon, brisket. Anything we can get usually. We use oak, hickory or mesquite for preference, but failing that will use any kind of wood except treated lumber or plywood. With softwoods you just use a little less.

Mostly we do the smoking directly on the barbecue or in the pressure cooker. We have a new smoker but haven't used it yet.

To smoke in the pressure cooker, put sawdust, some tea leaves and herbs (sage, rosemary or whatever you prefer) onto some aluminum foil on the bottom of the pressure cooker, and put the fish or meat on the rack. Close the lid but don't put the weight on. Turn the pressure cooker on until smoke comes out of the vent. Then turn it off, put the weight on and leave it to cool.

No BS here.

Cold smoked trout from Georgian Bay is the ultimate hangover cure. I also discovered that it's almost better than the beer. The trick is to smoke it within a day of being caught, never freeze the fish, eat it cold, use locally cut wild apple or other hardwoods (never softwoods, mountain ash is nice), and thank the fish before you eat it. Goes well with cider and blueberries.

How the hell would exposure to Folk Legacy ever influence such a stellar individual as meself?????? Ya' know Hawk, if you'd get the damn thing done, we could make molds of it and sell them. We've got a lot of latex left over from when the condom factory blew up and the inmates at the Neil Young Center for the Terminally Screwed could paint them after tiple practice. Should I ever develop a desire for a meat smoker. I would like to say here and now that it would not have been created nor would I have been influenced in any way by reading the diatribe above.

I am currently up to my F'in ears in loaves of all shapes colours and sizes. Non of which were influenced by Mudcat.

Nor am I going to blame Mudcat for the extensions of bread that I am reading about , testing and researching in.

It looks like I am about to gain a masters in "The philosophy of bread and its variations in the western diet".

Bollox to Mudcat and if anyone comes up with another obscure thread that involves me not being influenced in twee little items like "meat smokers" or "hedgehog terrine presses" then so help me they better be very afraid coz my wife will not take many more prisoners....

Have I been influenced by the Mudcat? Naw! Would I miss it if it were not here? Naw! ****** (time passes)**** Now that my nose has stopped growing, I'll add my two cents to the smoker comments. I tried smoking chickens but it hurt my lungs ...aw...!

I used Mesquite wood for several years but have become addicted to apple wood of late. I'm going to smoke four chickens and a turkey tomorrow in my smoker. I give my neighbors a smoked chicken each Christmas, and tomorrow is the big day. The turkey is for moi! I'm interested in your comments, Spaw, about using citrus in the drip pan. I've never tried that. And don't think you are the only crazy guy on the Mudcat that has thought about building a smokehouse! I'd love to have one in my backyard. I can still remember how great my grandpa's smoke house smelled after years of smoking hams and sausages the Tennessee way. As a matter of fact, my family and I visited Monticello in the early 70's and the smoke house there had that same wonderful aroma.

Tell Heather you can live no longer without a smoker, Rick! Santa can bring you one!

Dani...thats blatant thread creep, I inferred that Mudcat has never inflenced me in Breadmakers......I didn't say it hadn't ruined my life in lots of other ways.

Dani, I knew all along that you sang in public. (Wonderfully, too, I might add.) You have true grit, woman!

I must admit that I never grabbed the arses of men I didn't know extremely well before Mudcat. I definitely never did it in public, and it never before involved having clothes on. Uh...maybe too much information...

Burning question: Does anyone around here use extra light strings, or know anyone who does? I was given a brand new set of guitar strings to try out, and I don't think I can use extra lights.

Try em with a strong brown four using demmerara sugar with a fast acting dried yeast on setting 7 (three hours)..

Feck you, Spaw. You have to be available for travel. I have demonstrated great proficiency at the travel, at the grabbing of asses, as well as having my ass grabbed. Your job in the layabouts at large and for hire, is entirely different. And you know it. For those that don't know what it is, it is quite simple. If, while we are laying about, Fieldings pickin', Swan's singing, and my being the grabbor/grabbee......if all those things don't work and we discover that said recalcitrant woman is just not responding...........then, and only then...........you may try flaring one off to see if we can impress this prima donna. If that don't do it, we go back to nappin'.

Though we creep farther afield, I feel it necessary, in order that our reputations be unsullied, for the record to show that I was neither party to, nor witness to, any ass-grabbing at the Getaway. FSGW and Mudcatter alike acted with dignity, chivalry and decorum.

All except for Max and Kendall. And I'd hang around with either of 'em anyway.
