No lie, folks, daughter Amy and I stopped by Chez Patterson on April 22, on the way to visit my sons and go to an anime convention. We had a a lovely visit, and had to leave far too soon. Spaw made fantastic sandwiches called Kentucky Hot Browns. {DO NOT even go there! They were invented at the elegant Brown Hotel} Look up the recipe on line. There are a bajillion variations (the one involving peaches sounded a bit scary), but Spaw has amalgamated a happy fusion of the best elements of them all. We had to leave far too soon, but I hope to get back for another visit in less than a year's time, for a change.

The warning that I put on cheesecake according to my mother's recipe seems even more appropriate here: "Contains NO Nonlethal Ingredients".

Hi, gnu.

Sure it looks bad for the arteries, but remember you have the option of trimming the crust from the bread. That'll help.

I'm pleased to hear that Spaw is up and at 'em.

I put a Red Sovine thread up in the music section entirely for Spaw's enjoyment...and the silly fucker never even opened it. He probably never even saw it. It has now fallen off the bottom of the board, thus earning the very rare honor of not going beyond a single post.

There's as bad as "Honey"; there's as bad as "Having My Baby", or "I've Never Been To Me"; but beyond and below that, there's Red's "Teddy Bear".

Tsk, Gnu & Little Hawk. Gnu, Spaw checked with me beforehand to make sure that the ingredients were AOK with me and Amy (my nutrition watchdog, er, guardian angel) we all agreed that "moderation in all things" would cover this, and I celebrated our visit by fasting for a day the next week, then dieting a bit more. It was worth it.
LH, have you not yet learned that when presentation takes precidence, the flavor usually suffers?

Presentation doesn't take precidence. It takes precedence. ;-)

Since Spaw somehow missed the Red Sovine song I posted for him in the music section above, I have posted another one to cheer him up.

Well Hawk, I'll go have a look but I haven't been around for a few days and missed it......as I almost did here!

For us, having a visit from 'Fox and Amy is always a joy. Mary brought me a great gift.....a storyteller from Minnesota who is just great. Well, not him, but a recording of him........Anyway....Karen and I as before enjoyed the company.   I've said before on here just how taken we are with Amy and again this time she didn't disappoint!   Very neat and and very cool young woman.   She made sure before she left that she shared some love-time with every cat in the house as well as our goober-like dog. Both Mary and Amy are damn fine huggers which means a lot!

Mary brought that damn chocolate zuch bread and I mean it was rich. I see she posted a thread which I'll have to post to as well. AS far as the Kentucky Hot Brown, I ate it in at least a hundred or more restaurants and diners with all sorts of variations. Yeah....its rich and not really too heart healthy but it ain't like you eat the damn stuff every day. I took what I liked from many of the variants and my recipe goes like this:

SPAW'S KENTUCKY HOT BROWN

---You will need enough turkey for eight 2-layer sandwiches, preferably sliced white, although dark slices work well too....a matter of taste.

---Start by cooking one pound of bacon in a skillet. Cook soft and don't overcook as you will be baking it later. You need at least 20 strips of bacon

---While the bacon is frying, toast 24 slices of good bread. Use good bread, sourdough is excellent.

---Set aside the bacon strips and now lightly brown the turkey in the bacon grease. Just a bit on the crispy side.

---Set aside the browned turkey and use an appropriate amount of flour, salt, and water to make the grease into a thick gravy. Add a tablespoon of Worcestershire Sauce and a tablespoon of Cayenne Pepper Sauce. Add black pepper and garlic powder to taste, about a teaspoon each. Salt to taste.

---As the gravy cooks, add one package of frozen peas.

YOU ARE NOW READY TO ASSEMBLE

---You will need at least 4 cups of a sharp cheddar, shredded. Or use half swiss and half cheddar. Also cut your bacon strips in half to divide them up.

---Put a thin layer of the gravy on the bottom of the pan.

---Arrange eight slices of toasted bread on the bottom of the pan.

---Now put a bit of gravy on each slice of bread, then sliced turkey on this first layer, followed by a layer of cheese, bacon strips on each sandwich, then a layer of gravy.

---Put the second slice of bread on each sandwich and repeat what you did on the first layer.....a bit of gravy, turkey slices, cheese, bacon strips, gravy ... and then top with the final slices of bread.

---Cover the top slice of bread with gravy, bacon slices, and then a layer of cheese.

---Bake at 375 for about a half hour and then let stand for at least 15 minutes before serving.

SERVE AND EAT !!!!!!!

*********************************************************************

The above can also be done in a single layer sandwich to save a bit on the fats and calories because you use less ingredients. That's what we did when Hollowfox was here and I don't think it lost much in the taste. Tomato is only good on these if they are "home grown" and in season. Thus we rarely have tomato on our hot brown....LOL

Sounds very rich. Any Dachshund would want to wolf down enough of it to put him in the veterinary emergency room.

Spaw, how many of us Mudcatters have ventured to your home in all the years you've been here? Was I the first?

Not many have come here to visit me in the California wilderness - Kendall, Jacqui, and Susan of DT are the only ones, I think.

There are only a few situations that cannot be improved by the addition of a Dachshund, Spaw.

Is this a use for leftover turkey, or do you start with fresh?

Ideally, leftovers! To me a Thanks giving turkey is best used AFTER T-Day and the two best uses are KHB and Turkey Pot Pie!

In answer to your question Joe............Yeah, I think you were the first! I have also met with others in Columbus who are passing through and going elsewhere. I always ask if that is preferable because coming to Bremen is a trip off the beaten path. The first 'Catter I actually met was Cara who no longer posts. At the time she was working in DC but had come home to Newark to see her family at Easter and I ran up with my two young sons and had lunch there.

In Columbus we met several 'Catters including Dave Swan who was back here getting a new Squad and I wish he had been around a lot longer to say the very least. And that was definitely true with Bill and Rita as well. We had a great time over a supper at Logan's and the conversation never gets better than with them.....and most other 'Catters I have met. WYSIWYG was going to meet us once too but couldn't find the freeway exit which means she'd still be lost in southeast Ohio if she'd tried to find Bremen.......LOL.

Speaking of which, Bert and Tree stopped a couple of times at the house and seemingly had no trouble. Had fine times with them of course. On the other hand, Mario came to see us on his way to Texas and got lost in Zanesville about 40 miles from here. In his defense, it can be confusing as hell and also is home to the the famous "Y-Bridge." There is a stoplight midway across the river at the "Y" and one way will take you across the river while the other lands you a few blocks up from where you entered on the same side. Don't ask. After losing a ridiculous amount of time in Zanesville Mario was not around as long as either of us had wished.

When Bill Sables along with Sam and Ian arranged to come by, I had to change their plans a bit when it turned out I had to be at the hospital for surgery the next morning at 5:30AM and would be spending the night at sister Connie's in Columbus. This worked out well as we took our camper up and they spent the night in it. That was a really fun night for everyone and Connie's family has heard so much about many 'Catters she and her family really had a fun time!

Big Mick I drove down to Cincy to meet, which brings up a final point. If any of you are passing through Ohio anytime, let me know and I'll try to either direct you here or meet you somewhere more convenient......DO YOU HEAR ME ALLISON?

Spaw, I have a wager for you. I am betting that I am lazier than you are. That's right, you heard me. I feel that there is no way you can match me in the arts of extreme laziness, and I am throwing the gauntlet down...or I would if I could summon up the effort...

Among the things I am basically too damn lazy to do is: drive down to Ohio and visit you. I'm also kind of surprised I was able to even summon up the will to type this post.   But here it is.

I may be slipping.

I'll be flying over Ohio if I go to Getaway. Does that count? I mean, the airspace goes all the way up, right? How about Middlefield -- would you drive there? Or if I visited my niece in Cleveland? How about Toledo or worse? I've been to Bremen, but you didn't even step out and wave hello. Of course, that was in 1977.

Well first Rap, as I'm sure you know, most of the state refuses to acknowledge that Cleveland is a part of it. Toledo was damn near a part of Michigan and we actually feuded some over it. This shows how damn stupid we are.

Ah yes the Ohio Pike, longest dullest stretch of road in the eastern half.

I tried once to stop in on Pat and Karen on a trip through Ohio. I stopped a convenient Cracker Barrel and called, then I called again, and then I called some more. The phone was always busy. Probably dial up service and Pat was ON-Line.

But I will try again next trip through to Louisville and its environs.
I'll bring him a package of Heid's Hot Dogs and a bag of Salt Potatoes.

Likewise my door is mostly open and it's not far from a thruway exit.

Regards

Don
