From: Helen Date: 27 Jul 03 - 02:04 AM I have a loquat tree (known as biwa in Hawaii - I didn't know that, and also Japanese plums etc) and the fruit is just starting to ripen. I don't use them much although I have started eating them off the tree. I was wondering whether the Mudcat cooking brigade can offer me any yummy recipes for using them. I've done a bit of a recipe search on the 'Net and found a few recipes for jam, jelly, sauces for meats, ice cream topping, etc but I'm sure you guys will have lots of lovely variations for these recipes and some new ones besides. I didn't realise that they are considered a bit of a luxury in some places. I also didn't know that the leaves can be used for tea which is believed to have some health giving properties, and that some people claim that loquats or their seeds (caution: too many can be fatal) or the leaves may assist in treating some forms of cancer. From: open mike Date: 27 Jul 03 - 02:55 AM i hope some recipes get sent in because i have 6 loquat trees. no fruit yet..they are babies, but i may have loads in the future so hope to see some ideas submitted here. i wonder if they would be good dried? THEY SEEM LIKE APRICOTS IN OME WYAS. WAYS. i also have a jujube tree. i like those unusual fruits. |

I've just gone back and revisited all the sites I looked at yesterday and did what I should have done then - copied the site addresses. I still haven't done any work today, but tonight - maybe - I'll cut and paste all the addresses in here. I was really hoping to get some real life experiences from people here to add to the recipe info, e.g. favourite recipes, tips & tricks etc. And also any ideas/thoughts etc on the claims for medicinal benefits. Most things are only in early flower when it fruits. Loquat wine must taste like lemonade! Very tricky. Our fruits have more seed than pulp, but it was a seedling from a wild tree, uncultivated. |

It took forever to peel the little guys, and by the time we had peeled/demembraned enough to make a pie, most of them had oxidized to a very unappetizing gray color. But we'd worked so hard, we went ahead and made the pie (usual method: bottom crust; fruit lightly tossed with sugar, a little flour, and a touch of cinnamon; dot with butter; top crust). Guess what? The color repaired itself to a heavenly orangey-gold color during cooking, and the pie itself was a memorable combination of flavors -- sort of an apricot/mango (or was it papaya?) effect. Wonderful! This was years ago. I've never done it again, because I don't have regular access to them. But I would, no question, if I got the chance. |

From: open mike Date: 29 Jul 03 - 12:33 AM most fruit can be prevented from discoloring by dipping or soaking in lemon juice - this keeps it form oxidizing and turning brown. plus adds a tangy taste...yes the fruit ripens early..with cherries, strawberries and apricots. my trees were grown from pits from trees in Berkeley--s.f. bay area...hope they will bear fruit at 2800 ft. as well as they did at sea level. |
