I can't see how any kind of ordinary accompaniment would do anything for the Dun Cow. If it has to have an accompaniment, maybe a brass band.

The only accompaniment you want here is other people singing along. And drink.

Okay, here's how I do it (with somewhat different words--I copied these from the DT):
  Verse:
Am Am
Some friends and I in a public house
Am Am
Were playing dominoes one night
Am Dm Am Dm
When into the room a fireman came,
Dm Dm E
His face all chalky white
Am Am
"What's up?" says Brown, "Have you seen a ghost?"
Am Am
"Have you seen your Aunt Moriah?"
Am Dm Am Dm
"Oh my Aunt Moriah be buggered," says he,
E E
"The bleeding pubs on fire"

Chorus:
Am Am
Oh, there was Brown, up side down
Am Am
Mopping up the whiskey on the floor
Am Dm Am Dm
"Booze, booze" the firemen cried
Dm Dm E
As they come a knockin' at the door
Am Am
"Well don't let em in till it's all mopped up
Am E
Somebody shouted, "MacIntyre"
Am Dm Am Dm
And we all got blue blind paralytic drunk
E E
When the Old Dun Cow caught fire

(Last line:)
E Am
When the Old Dun Cow caught fire

I have heard Brendan Nolan perform this song in person and he is a LOT of fun! Be sure to see him if you ever get the chance. I also own the excellent version he recorded on his live album Southern Sunset

(If you are interested, he has made some songs available on the web here, though unfortunately ODC is not one of them.)

I've only heard it done with guitar accompaniment. I have worked out a chord sequence which works for me, though I suspect there's a "better" chord arrangement to be had (I use Am, Dm, & E). I'm quite pressed for time right now, and it would take me a while to lay out the chord changes with the lyrics. I'll plan to do that later, probably this evening.

I've never heard it played on an instrument. Our group always does it UA.

I found the lyrics for Old Dun Cow but I could not find the chords. I'm not that good at getting them from a recording so I need to ask you nice folks....anybody?

Macintyre....
