Keep the batter very cool by adding some ice cubes to it, but not too many as it thins the mix.

The cooling effect means there is a bigger temperature differential between the batter and the hot oil which results in a lighter crispier coating.

It what the Japanese do when they make tempura.

ahem...use cornmeal. Just dredge the damp fish in cornmeal, then fry it. Throw some egg, milk and onion in the cornmeal and make hushpuppies.

Use pancake batter mix, but substitute beer for the milk. It's especially good with fresh caught perch or panfish! Doc

Here in the US, Matzoh Brei is not a brand name, it is an omelet made with crushed Matzoh and eggs as the two primary ingredients.

Try Matzoh Meal. Since this is the Passover season, it is very easy to get at most supermarkets where there are at least a few Jews in the Neighborhood.

MM is used for making matzoh meal pancakes and would certainly work well for any of various fritters and coatings. Goes well with sour cream, apple sauce [or other fruit sauce] or yogurt.

You can also use it make matzoh balls--anywhere from one to 6 inches in diameter. Goes very well in chicken soup.

The fish and chips shop up the road in West Hampstead say they owe their prize-winning fish batter to Matzo Brei, instead of regular flour. It is tasty!..xx..e

back when I was a short order cook - we dunked in a very thin batter, then flour, then thick batter

Pat your fish dry with a kitchen towel before dusting it lightly with flour, then dunk it in the batter.

Thick cut cod, toss it in finely ground corn meal, then dunk it in a batter of flour, salt, and seltzer water. This works best if you have a 'deep fryer'. Then all you do is suspend the fish in the oil for a second or two (the batter balloons up and at that point it won't stick to other pieces in the fryer) then release it and take it out when the batter is golden brown. ---Thanks for the reminder, a friday fish-fry sounds lovely---

I can make a good crisp batter - the problem I usually have is getting it to stick. I dip the fish in flour first, but I still find that it's difficult to get a good consistently even coat of batter mix. I have experimented with different consistencies of batter, but I always seem to have a problem. Any ideas ?

Flour, salt, and either beer or ice cold soda water, quantities to be juggled to achieve the required consistency, don't use measures particularly for my whisky!

I don't think the success of the original Harry Ramsden's (at Guiseley) was down to the batter so much as the fact that like any other self-respecting chip'oil on that side of Leeds (the incomparable Bryan's comes to mind) they fry it in beef dripping. God knows what goes on in the franchised Harry Ramsden's that now litter the UK like Macdonalds.

My grandma, back in the 1950s, used a beer batter for fish. She was settled in New Zealand but her recipe came with her from England. She was secretive about it and I never got hold of it. Only met her twice anyway. Joy

That's like the ice fishing story:

You go out onto the ice with your augur, a club and a can of peas. Drill a hole in the ice and arrange the peas around the rim of the hole. When the fish comes up to take a pea, you club him. That's it.

I have found that using a cornbread or pancake batter at about 50% of the 'official' strength works well for fritters of various sorts. [That means 50% of the usual amount of solids in the liquid batter.]

Hmmm! I wonder if that same batter would work for squid. We've landed a huge one over on the Invasion of the Giant Squid thread. But first, we have to find a frying pan big enough to cook beer-battered giant squid rings. The things are the size of Hoola Hoops. One of 'em will feed a family of five for days.

Our Alaskan Halibut tastes best when cut into 2" chunks, dipped in a tempura batter (I use commercial tempura batter mix mixed with a dark porter instead of water)and then deep fried to a golden brown. My mouth is watering already.

I don't know if its called a beer batter or what but the fish and chips at the Dubliner in DC is so good with a smooth golden even crust I was wondering how to make it.

Any fish and chips experts recall a similar thread not long ago?

After having tried some of the cheescake recipes here I am not a very trusting soul any longer.
