Heat gently and add a little vegtable oil slowly, whilst stirring and it often recombines. It's not suitable for much though, I feel. Those double wall steamers are nice, but a right pain to clean. You can get steamer/bain marie inserts for common pan sizes. Stainless steel, one piece, cheap, easy to clean, unbreakable and as they fit properly they work really well. |

As for adding liquids, yes, you can put the cream in with the solid and heat both together, or you can add the liquid chocolate to the warmed - not boiling cream. Chocolate should be thoroughly melted by about 80 Deg C. I bought an expensive little german double walled sealed stainless steel steamer - also good for making proper custards from scratch - without custard powder!. |

Means you wern't paying enough attention to it. Just throw it away, as it is now ruined. To add a liquid to melted chocolate, melt the chocolate with the liquid already there, and you should have no problem. There should be so little heat in the system that evaporation, even of alcohol, will not matter. If you wish to add a solid, such as orange zest, then do that to the melted stuff. Coffe beans are nice too.... PS, for UK 'catters, go to Lidl for cooking chocolate. They insist on importing much of their stuff from Europe. This means that they do reasonable 74% cocao stuff at about 40% of the price of Lindt, so you can use lots of it for cooking with, or making proper hot chocolate etc. |

Subject: RE: BS: How to coat pineapple cubes w/ chocolate From: The Fooles Troupe Date: 03 Aug 05 - 06:50 PM Lindt do both a 70% & 85%... but you have to be extra careful when trying to melt it - it can separate, etc. Get a pan of boiling water, over the top of that put another (coverable, preferably), insert the chocolate broken up into smallish pieces, then remove the boiling pan from any heat source. The amount of heat in the system will be sufficient to melt it. Do not let any water, or any cold liquid such as cream come in contact with it - it will curdle or separate. But why you would want to contaminate such hard to obtain expensive chocolate with such things, is like adding water or ice to an expensive single malt whiskey... |

You won't get the shine, but it will set hard, without any wax or such like, and it tastes of something, unlike most milk chocolate. It's more expensive, probably European, and harder to find, but it worth it. I have only sorrow for those who've never tried it, and pity for those who don't like it. It's the difference between Bud and real beer, or most bodhran players and musicians... |

Put the fruit piece - one a t a time on one fork, dip it in the melted chocolate, then carefully transfer it to the other fork to move it over and dip on another side. gargoyle, I could not imagine in my wildest dreams (nightmares?) that you would recommend eating parafin wax so I didn't even have to be told that that posting was not genuine. Melt in a double boiler - (over water) and with slow patience allow: one pound chocolate (I preferred bitter sweet to counter the fruit)and on quarter pound of parrafin sealing wax (canning wax or bee's wax) to blend.
Dip, let stand, refrigerate for storagae - enjoy.

Melt in a bowl of hot water, and keep it there, so it stays liquid. Chopsticks are the best tools for this, and you will need to dip them twice to fully coat them. Use good dark chocolate, 70% cocao or so, and the rum won't dilute the chocolate too much, but do drain them off for a little (30 seconds or so) while before you coat them. Let them set on a wire cake rack if you have one, or a smooth ceramic surface, ie a plate, if not. |

Is it best to : 1) Dip them in hot chocolate. ( This might "dilute" the chocolate with rum.) 2) Or should I pour hot chocolate over them. I'm sure there is some confectionary expertise out there.
