From: open mike Date: 22 Dec 10 - 11:38 PM this one from one of those links sounds interesting.. http://www.ifood.tv/recipe/scandinavian_herring_salad i have been enjoying pickled herring lately.. on a slice of rye bread...they make these small party breads.. with a dab of cream cheese...like Alouette or Rondele... with herbs and spices and a chunk of pickled herring on top... it comes in jars or tubs in the reefer section of the meat dept. (unless you are lucky enough to live in Minneapolis/St.Paul where there is a store that has pickled herring in bulk) or in the Bay Area at the Scandinavian store which recently moved to San Pablo Ave. (they have salt herring there as well as numerous flavors of the pickled type...with mustard, sour cream, wine,, etc etc. 2709 San Pablo Ave (between Derby St & Carleton St) Berkeley, CA 94702 (510) 705-1932 www.nordichouse.com/ is there a tradtion of herring for new years? |

I didn't grow up in the south so I don't have any interest in black eyed-peas, but the herring is a healthy snack I enjoy year round. 3 or 4 pieces (I prefer the wine variety) at a time, right out of the jar. From: Bat Goddess Date: 23 Dec 10 - 04:35 AM I usually just make my own herring in sour cream -- I use pickled (usually wine) herring, drain the brine, add sour cream, a bay leaf and some peppercorns (red peppercorns look nice). Traditional in my family (German ancestry, Midwestern US) around Christmas and New Year's, but I, too, like pickled herring all year round. Linn |

For many years, the Norske gentlman would make his special pickled herring this time of the year. I just bought some and now I'm on my second jar! Seriously, never had it and never will, unless it's used as torture and I can't "Just Say No". I almost tried some roasted silk worm larvae in Korea. I might have liked them, but you can't get good roasted silk worm larvae in the US, do why bother? I have never been tempted to try lutefisk. Ever. Linn's pickled herring is pretty good, though! |

I haven't had carp in ages (in fact my parents never did, either) but the herring salad is a wonderful thing. I made up my own last year after browsing online, but I was wondering if anyone here had their own recipe. |

Bob, my mother's cousin, Charles Husby, used to tell some really bad lutefisk jokes that inevitably made it into some column or other in the Herald over the years. Do you remember reading any of those? (Charles died a few years ago. I know some family members used to wince when Charles stood up to speak at family reunions and such, but he was so funny! There was always a group of us who would be laughing so hard, despite the glares from our parents. I think stand-up humor was not a typical Norwegian occupation. In real life, he was in the painter's local.) SRS |

Herring Salad This is a "cold table" dish, typically served with smørrebrød. 6-8 ounces (by weight) pickled herring, drained and sliced 1 cup diced cold boiled potato 1 cup diced pickled beets 1/2 cup diced peeled apple 1/3 cup diced onion 1 teaspoon Dijon mustard 1 teaspoon sugar 1 tablespoon vinegar 1 cup thick white sauce, or 2/3 cup heavy cream, whipped Pepper and salt Chopped parsley 1 or 2 hard-boiled eggs, sliced Mix the herring, potato, beets, apple and onion in a fairly large bowl. In a small bowl, mix the Dijon mustard, sugar and vinegar into the white sauce or whipped cream, and gently blend it into the herring mixture. Season the whole thing with salt and pepper. Finally turn the salad into a pretty dish and top it with slices of boiled egg, and a thorough sprinkle of chopped parsley. If you can find salt herring, substitute a whole one (two fillets) for the pickled herring. Soak the fillets overnight before making the salad. |
