Hi, Harpy -
I've been trying to label every message that includes song lyrics with ADD and the song title. If you go to QuickLinks and then to Old Advanced Forum Search and search for "Dem Deer, it will come right up.
Or - Click Here.

It's also in the Rise Again Songbook, and I posted the lyrics at Mudcat when I prepared them for the songbook.

DEM DEER
(Peter and Lou Berryman)

Hope you don’t mind when an old man sings
Helps me to keep my mind on t’ings
So when I go where the animals thrive
I sing dis song on the treacherous drive
A - - - / - - E A ?

Dem deer dey’re here, den dey’re dere
Dey’re here, dey’re dere, dey’re everywhere (repeat)

At dawn in fields & coniferous groves
Bucks & does come alive in droves
Just when you think that the coast is clear
There in the road is a whitetail deer

In venison-land as the day goes by
Deer lay low when the sun is high
Sun goes down & de night draws near
Twilight brings out the whitetail deer

Bucks bed down where de tall grass grows
Fawns dey doze where de doe does doze
Dose does doze dere, dose does doze here
And dose are de habits of de whitetail deer

I can tell you about dis stuff, Harpy. Deer hunting is a religion in Wisconsin. They don't use guns to shoot people in Wisconsin (except, perhaps, in Kenosha....but that's an aberration). Hunting deer is the thing. On Fridays in Deer Season, US Highway 41 is bumper-to-bumper with traffic going "Up North" to hunt deer. And if they don't get any deer, at least they drink a lot of brandy. And then on Sunday night, US 41 is bumper-to-bumper going south, and many vehicles have deer carcasses tied to the top. Now I know you're more-or-less on the other end of Highway 41, and I don't imagine you have too many deer carcasses on the southern end of the Dixie Highway.

When I was growing up in Racine, we were in an Augustinian parish with German priests and brothers and nuns. Brother Maurice drove our school bus, and he also raised Labrador retriever hunting dogs. Every Fall, he'd go North and get a deer for the German nuns to cook up. He had a crane alongside the church for hanging his deer once he got it, for whatever reason people hang deer and other game.

I went to Mass at the old parish a few years ago, and the priests are now American Augustinians and there are no nuns and brothers. I talked with the current parishioners and pointed out the crane on the side of the old church. They had no idea what the crane was for. I think I grossed them out.

But the venison sure tasted good, especially with the sauerkraut and rotkohl and seasoned boiled potatoes the nuns made.

Ya, sure!

The reason you hang deer is partly to help drain all the blood before butchering, but mainly because it helps keep the muscles stretched out, preventing the deer from developing a gamey flavor. Another thing I've heard is that it can prevent bad gases or acids building up in the internal organs (mainly the esophagus), but I'm not sure of the credence of that one.
