Subject: BS: Pie Party From: Beer Date: 14 Mar 06 - 03:20 PM Driving home yesterday from a family gathering on my wife's side, I was thinking of a tradition that we started about 8-10 years ago and thought I would share it. Birthday's are celebrated once every three months that way it is less work for everyone ( Lets be honest the women who usually do all the cooking and a lot more things.). However, cake is not the in thing. Were a family of 6 and everyone brings pies. As an example this past weekend we celebrated the birthdays for the first 3 months of the year. There were 2 lemon pies. 4 butterscotch, 3 raspberry, 4 pumpkin, 2 mince meat and 2 raisin pies. Seventeen pies were gobbled up and by 9 in the evening there wasn't a piece to be found. The ladies had come up with this idea as they were discussing the waste with all the left over cake. Depending on the child (age) whose birthday is being celebrated, a small cake is made. No matter what, cake or pie, a candle or more than one is stuck in and happy birthday is sung. I'd be curious to know if someone out there does the same thing. I for one think it's a great idea and can hardly wait for May. Beer |

In Europe (and Canada) they also commemorate NEARLY PI day on July 22 22/7---bet you know why. Their husbands (another 6) children another 8 plus 2 neighbors total= 22 Not so much for mostly growing farm boys and girls. Frogprince the pies I mentioned were at this past party. Most of what you mentioned we have had at other times. These are just the ones that came up this time. Christmas we do the same thing but with a heck of a lot more pies. |

We discovered five-fruit pie on the Canadian side a couple of years ago, and I think it's now on my short list of all time favorites; the Mrs. made me one a few weeks ago. I've been in a pie eating contest just once, at a company picnic. It was a team relay. We were told we would each have to eat 1/4 blueberry pie, so I allowed for that when eating other stuff beforehand. The sunuvaguns sat out half a pie at a time. I didn't eat blueberry pie for a year or so. |

Imagine thirty or more participants with at least as many pies. My father's favorite "birthday cake" was my mother's Clemson Peach pie. Mine is French Silk pie with fresh whipped cream and a scattering of sliced almonds, or Pecan pie. Then there's apple pie, Chesse pie, coconut cream, walnut-oatmeal, apple, apple-cranberry, blueberry-peach, sweet potato, cherry, plum, pear, Mississippi Mud, Shoo-fly (too sweet for me), blackberry, raspberry, elderberry, strawberry tart, and hundreds of other variations on pie. But here's one of many recipes online that looks yummy. ~S~ === Bumbleberry Freeform Pie A bumbleberry pie is one with a mixture of berries…you can use any combination of blackberries, blueberries, marionberries, strawberries, raspberries, ollalaberries, etc. I used about a cup each of ollalaberries and strawberries and about ¾ cup of raspberries. This recipe will, by nature, be a bit general about amounts. It's pretty hard to mess up this recipe, so relax and throw in what looks good, pile it up, fold over the crust and enjoy some summer goodness. flaky pie crust dough – enough for single pie crust. I used Pillsbury Ready Crust due to time constraints, but your favorite single crust recipe or half of your favorite double crust recipe is even better about 3 cups mixed fresh berries, rinsed and patted dry. If using strawberries, hull them and slice. ¼ teaspoon minced fresh mint (optional) 1cup ricotta cheese 1 tablespoon sugar 1 egg or ¼ cup egg substitute 2 tablespoons all-purpose flour Water to seal the folds of the crust Sparkle sugar (optional) On a lightly floured surface or board, roll out the crust until it is about 15 inches in diameter. It will be thin, but that is OK. Transfer, using your rolling pin, to a large cookie sheet or pizza pan. Since there will often be sticky juice seeping onto the pan, you might line it with baking parchment paper or foil. Mix the berries together gently (and the mint if using) just to combine. Spread about half of the ricotta mixture in the center of the dough and out to a diameter of about 8 or 9 inches. Top the ricotta area with the berries, mounding slightly in the center. Fold the rest of the crust up and over the berries, pleating and folding the dough as needed to fit. There will usually be uncovered berries in the center…that's OK. Brush some water on the fold and press gently to stick the folds together. Run a wet brush around the edge and sprinkle with the sugar is using. Bake in a preheated 400 degree F oven for 15-20 minutes until the crust is browned and berries are bubbly. Cool the pie still in the pan, placing the pan on a wire rack. Once cool, carefully slide the pie onto a serving plate. If your baking sheet has sides, you may need to have assistance and use two wide spatulas (pancake turners) to transfer the pie to the serving plate. Serve as soon as possible so that the bottom crust won't get soggy. Subject: RE: BS: Pie Party From: Monique Date: 24 Dec 08 - 03:20 PM Here's my grandma's almond and coffee pie recipe For a 28cm ~ 10-12 inches Ø pie plate 2 layers of puff pastry one cup / 4 oz almonds / 125g one cup / 4 oz fine granulated sugar / 125g - or a little less, depending on your taste + some more to sprinkle grated lemon zest (~¼ lemon) about 1/3 cup of VERY STRONG coffee (stronger than Italian expresso) 1 egg yolk (optional) First toast the almonds under the oven broiler or in a dry frying pan, then ground them. Or use ready grounded almonds and toast them stirring all the time as they're VERY QUICK to burn. Add the same weight of sugar (you may want a little less sugar, but not too less) Make some coffee to moisten. The coffee has to be strong: I put 2 doses for 50ml ~ ¼ cup, and I put more or less ¾ cup of coffee. The stuffing must not be too thick but not too thin either. Add some grated lemon zest. You may add an egg yolk. Butter a pie plate and cover it with the 1st layer of puff pastry. Pour the stuffing on it, then cover with the 2nd layer. Stick the two layers rim with water, draw lines with a knife both lengthwise and width wise to get diamonds and pierce some holes in the pastry to allow the steam out. Sprinkle with sugar. Bake in a hot oven (400°F) for 20-30 min, just the time to allow the pastry to bake. |
