I have a batch in the slow cooker....I 'whoops-ed' and started out with too much tomato paste...I'm going to try to fix that with some A 1 steak sauce today. Other than that it's pretty darn close. I'll let you know.

Poor proofreading on my part... I forgot to list the tamarinds. So ignore the previous post & try this instead:

6 oz. water
6 oz. tomato paste
1/2 cup vegetable oil (most vegetable oils are soybean)
1/3 cup red wine vinegar (5% or "regular" acidity)
1/3 cup white vinegar (7.1% acidity)
1 oz. anchovy paste
3 TBLS. soy sauce
2.5 TBLS. Lea & Perrin Worchestershire sauce
2 TBLS. Wright's liquid hickory smoke
2 TBLS. McCormick pickling spices (in an emptied tea bag to keep them out of the finished product)
1.5 TBLS fine ground black pepper
1 heaping TBLS. tamarind paste
2 teas. cayenne pepper
1 teas. paprika
1/2 teas. onion powder
1/2 teas. garlic powder
1/2 teas. dry mustard
1/4 teas. salt
1/4 teas. xanthan gum
dash of cinnamon

Cover and cook in crockpot on lowest setting for about 6 hours - will taste too vinegary until it cools.

This has about the right amount of mouth "dryness" and pepper-iness but still not quite the right overall taste. Pretty good substitute, though.

Pressure can...sorry I forgot to delete the Water from that phrase. It's a pressure canner, which is NOT a water bath canner, sorry, my mistake.

A pressure canner operates under pressure, 5, 10 or 15 lbs of pressure under the sealed lid. Takes a while. But after it pressures up, I'd think 10 mins should be enough for Woody's. IF it doesn' burst the seals.

A 'water bath' canner is a whole nother beast...it's just a big pan of boiling water that will cover the jars inside.

Straight pressure canner would be safer than just a water bath, which is used ONLY for very high acidic foods. Not sure yet that the Woody's meets the criteria for a water bath.

Let me get back to you on this after Sat or Sun, OK?

Sorcha - what do you mean it might "pressure can water bath"? I've never heard that term before.

I think you're absolutely right about the cayenne pepper ... it would make sense that there'd be a tabasco-like ingredient given that it's from New Orleans.

I think so...haven't tried it to actually cook with yet. Just dipped my finger in the jar. Mostly, I tend to prefer a slightly sweeter bbq sauce, but I'll cook with it before I decide.

And, I'll still try my hand at recreating it for the rest of you even if I don't care for it.

It says Distributed by Reilly. In order, the ingredients are--
Water,tomato paste, soybean oil, vinegar,spices, liq. hickory smoke, high fructose corn sirup, salt, garlic powder, sugar, flavoring, hydrolized soy protien, potassium sorbate as a preservative, caramel colour, sodium benzoate as a preservative, xanthan gum and red 40.

Isn't red 40 now outlawed? Carcinogen?
What the hell is the difference between spices and flavourings?
I can tell there is more oil than you might think--it pools on top
of the sauce.


If we leave out the preservatives, I bet this stuff would pressure can (it MIGHT) water bath because of the tomato and vinegar, but I'd not trust it) for, oh, say, 10 mins. Shouldn't take long.

Sorcha, what does the very last line on your bottle read - is it just "Reily Foods Co., New Orleans, LA 70130" or "Distributed by Reily Foods Co., New Orleans, LA 70130" or something else?

I found an old, empty bottle that I was using to store something in that didn't say "distributed by" and compared it to a recent bottle.

Both of them list tamarinds and xanthan gum as ingredients, but my older bottle (the one that just says "Reily Foods") doesn't contain corn syrup. The older bottle also specifies "white and wine vinegars (vs. just "vinegar" on the newer one) and "hickory smoke" (vs. "liquid hickory smoke" on the newer one).

The older bottle also lists "spices" before the "hickory smoke", while the newer bottle lists "liquid hickory smoke" and then "spices".

Actually, as I compare the ingredients list, there's a lot more "junk" in the newer recipe - instead of soy sauce there's hydrolyzed soy protein and some other stuff.

I never noticed a difference in the taste, though, so the differences must be subtle.

I can tell you right now that one of the 'spices' is hot, red chile powder. NOT 'chile mix'...just ground red chile. I'm guessing cayenne.

I'll give this a shot either Sat or Sun....And, tamarind isn't listed on the bottles I just bought.

Ladies and Gentlemen, I am in SHOCK! There are 2 grocery stores here. I usually shop at Store A, but they don't carry goldfish food so I went to Store B. There, on the shelf, were SEVEN JARS of Woody's!!

The girl stocking that aisle went and looked for me, said there were no more in the back room, but that she'd order a case for me. I said good luck. We'll see if the Shurfine/Affiliated food warehouse has any left.

Yes, I bought them all, so no one needs to send me a jar. As soon as I have time I shall begin to try to replicate it.

hey tom nall any word yet ?? I have used woody's for a good 40 years and reily foods has really messed up my bbq world. I am from ca. napa valley to be exact.and I BBQ several times a week in the summer and at least once a week in rain in the winter . my normal supply is 8 to 12 jars in the house at all times. I was really cought off guard when when they quit making it this time . Reily foods has a good following for a product that I have never seen advertised when you go to the super market one sees all that junk with all the fake sugar as the second item on the label I have tried some of them since I ran out of woody's and the BBq world sucks it is all to sweet. we had a famly reunion at our house in july 100 people aprox.and I cooked my usual a six burner BBQ full of chicken everyone asked why I changed the sauce I used. they all said I always had the best BBQed chicken they ever had. so if it gets back in stock I will take a few cases.they could start a woody's club and make it once or twice a year and everyone stocks up or when you have enough pre-sold run it??just thinking

Ya'll just keep saying Whole Foods. I don't HAVE one of those! And as far as I know there isn't one within driving distance either.

I put a pork shoulder roast in the slow cooker today with a half bottle of Wrights Hickory smoke, garlic pwdr and onion pwdr. Sauce optional. All 8 lbs of it are gone.

So, if I had Woody's available I might need to cook 20 lbs of meat! LOL!

Try Jardine's smokey mesquite BBQ sauce as an alternative for now. It is somewhat sweeter than Woodys, but close. Also, try Austin's Own. Both can be purchased at Whole Foods on Preston Rd.

WHAT A NIGHT! One I won't soon forget. I had just finished gnawing on some smoked ribs, slathered with Woody's Sweet 'n Sour Sauce. I was down in the basement earlier to bring up a fresh jar of Woody's and noticed that I only had three left. So I figured I better get online and order a case from Reily Foods. I've been buying it by the case directly from the company for a few years now because it's been hard to find in here in Richmond. It would cost me $25 for a case of 12, plus shipping.

Well, when I got to their Website and found out that they'd discontinued it, my heart just sank. My wife came in from the other room to see what I was moaning so loud about. I can't make my famous ribs without it. They just won't be the same.

I know it's selfish, but one thing I had wondered about after Katrina was whether I'd be able to get my precious sauce anymore. Looks like my fears have been realized, though my worries pale compared to those poor folks down there.

So anyway, I started Googlin' and found you folks and I'm glad I did. We can commiserate. And you can bet that I'll be contacting Reily foods tomorrow. I used to order from them by phone and they were always really nice folks to talk to.

Good luck to us all. Bring back Woody's, PLEASE!!!    MG

That's over $25 per jar ... my 48 jars are worth a small fortune!

I cooked up a batch of "faux Woody's" yesterday. The color was good, but it turned out too sweet. I think I need something that causes more of a "pucker" - probably either cidar vinegar instead of regular or some pickling spices or both.

I also used some hot sauce (Whole Foods Organic Hot Sauce) & that really helped.

But it's still not Woody's.

I think that word should be 'roux'....fat and flour mixture. Not rue, which is an herb or means to be sorry for.

Here is my recipe for Worch. Sauce:

Worcestershire Sauce

1 med. onion, chopped
3 Tablespoons (almost 4 oz.) whole mustard seed
1/2 teaspoon (not very much) crushed red pepper (hot)
2 cloves garlic, crushed or minced
1/2 teaspoon minced fresh ginger
1" ( 2.5 cm) cinnamon bark
1 teaspoon whole cloves
1/2 teaspoon whole cardamom, or 2 pinches of ground
Simmer the above in:
2 cups (16 oz) vinegar, 4 oz dark molasses, 4 oz tamarind paste OR lemon juice and 4 oz soy sauce. Simmer for about 10 minutes. Add:
3 Tablespoons salt
1/2 teaspoon curry powder
1 anchovy, mashed or 1 Tablespoon anchovy paste
4 oz water
(Original recipe says to put all the spices in a squeeze bag, but I don't bother)
Simmer all about 30 minutes. Then add 4 oz of carmelized granulated sugar.

To carmelize sugar: Measure sugar into small HEAVY (cast iron) sauce pan. Set heat at med. high. Sugar will soon start to melt......stir and shake until all the sugar is melted and ALMOST burnt. Remove from heat immediately!! It will burn in a flash!

Add the carmelized sugar to the soy/spice mix. Stand back as you pour--it will steam and foam up.

Let cool and pour all into a large jar. Date it. Shake daily for 2 weeks. Strain out the large stuff. Bottle and store in fridge. Keeps forever. Makes about 32 oz.

I agree about the "low and slow" approach. Remember, Woody's is a concentrate...meant to be further reduced depending on the application. I'm wondering if some of bthe darkened color may come from the "base" being a "rue" ??.

More to keep in mind on recreating the recipe. The Food & Drug Administration requires that ingredients be listed in the order they are present in a product ... so if water is the first ingredient listed and the recipe calls for 12 oz. of tomato paste, then there must be at least 12 oz. of water in the recipe.

Since water is the first ingredient in Woody's, maybe the recipe is cooked at a really, really low heat for a long time to reduce the sauce.

Also, I found a worchestershire sauce recipe on the web and am reproducing it here - I've noting the ingredients that aren't listed on the Woody's label:

Worcestershire Sauce Recipe Ingredients:

2 cups malt vinegar
1/2 cup water
1/2 cup molasses
1/4 cup tamarind pulp
1 anchovy, crushed
2 cloves garlic, crushed
1 onion, chopped
dash of Salt

Unverified Ingredients that may be in it (as �spices�)
1/2 cup dark soy sauce
3 Tbls. yellow mustard seeds
1 tsp. peppercorns
1/2 tsp. curry powder
1/2 tsp. red pepper flakes
1 1-inch long cinnamon stick
1 tsp. whole cloves
1/2 tsp. cardamon pods
1 1/4 -inch-thick slice of ginger

Directions:

Place the onion, garlic, mustard seeds, red pepper flakes, peppercorns, ginger, cinnamon, cloves and the cardamon on a large piece of cheesecloth and tie into a little bundle.

In a large saucepan, combine the spice bundle with the vinegar, molasses, soy sauce, and the tamarind. Bring to a boil, lower the heat and let simmer for 45 minutes.

Mix together the salt, curry powder, anchovy and the water. Add to the liquid in the saucepan. Remove from the heat. Pour the contents of the saucepan (including the spice bundle) into a stainless or glass container. Cover tightly and place in the refrigerator for two weeks, mixing from time to time and squeezing the spice bundle. After the two weeks, remove the spice bundle and bottle the sauce. Keep in the refrigerator and shake well before using.

The present-day "Original and Genuine Worcestershire", which still bears the names of its inventors (Lea & Perrins) is made of malt vinegar, molasses, sugar, shallot, garlic, tamarind, clove, anchovy essence and meat extract. [According to Larousse Gastronomique]

I found 4 oz. of xanthan gum for $3.06 at this website:

They have lots of other cooking products, too.

I also found it on Amazon.com, but at a higher price and a larger quantity. It's also available at the Country Sun grocery store in Palo Alto CA.

I found tamarind paste at an Indian grocery store on El Camino in Santa Clara CA (near Lawrence Expressway).

For what it's worth, my jars of Woody's list tamarinds as one of the ingredients. Also if you look at the ingredients on the Lea & Perrins Worchestershire Sauce bottle, it lists several of the same ingredients that are listed on the Woody's bottle.

Finally, in today's San Jose Mercury (8/4/07 - House & Home section, last page - in an article about organic alternatives to Roundup for killing weeds) there was an article that talked about "pickling vinegar" that's a stronger solution than regular vinegar (10% to 20% vs. 5% for the regular stuff).

Hello Fred,

It would be interesting to have your comments -- or criticisms -- about the sauce recipe I posted on August 2nd. (See also the follow up conversations for more details.)It is almost there, just a touch milder. I believe that slight additional jalepeno juice would add the spice needed. (My husband and I actually like the version posted.)Note that I took the license to add some Mrs. Dash and Accent. This was a convenience I took to cover some of the "spices" listed by Woody's. It seems to work. The recipe is to the best of my memory, so I may need to make some adjustments the next time I make it. I would appreciate hearing from you. Happy cooking! BBQ Chef

Partridge, That's too funny -- that recipe is originally from way up top of this thread, from which someone copy pasted it onto one of those recipe sites...and now it's ba-a-ack!

But thank you for the effort. I did a very thorough scrub of the Internet for copycat recipes before I started this thread, and there weren't any...not that there mightn't be some now.

I'm with Bryan on simplicity of ingredients. I wish I had an ancient Woody's bottle, from before corn syrup was on the ingredients list...'cause I bet xanthan gum wasn't, either. I got the right texture with the ingredients I used (no chemicals among 'em), with the black pepper and cumin thickening it up quite nicely. Now, I know the cumin shouldn't be in there, but I'm guessing whatever should be there instead oughta have a similar texture and effect on the sauce. Maybe just more black pepper & paprika. Hmmm.

MY WOODY`S COOK-IN SAUCE RECIPE

2 tbsp water
2 6oz cans tomato paste
2 tbsp canola oil (soybean oil)
2 tbsp white vinegar
2 tbsp red wine vinegar
3 tbsp liquid hickory smoke flavor (hickory smoke)
1/2 tsp onion powder (spices)
1/2 tsp garlic powder (spices)
1/2 tsp black pepper (spices)
1/2 tsp paprika (spices)
1 tsp salt
1 tsp dark molasses (sugar, carmel color)
2 tbsp worcestershire sauce (soy sauce, carmel color, anchovies, onions, tamarinds, flavoring, etc)
1/4 tsp xanthan gum (thickening agent)

Mix all ingredients and simmer until flavors combine and consistency is right.

This recipe is based on the order ingredients are listed (Water, Tomato Paste, Soybean Oil, White Vinegar, Wine Vinegar, Hickory Smoke, Spices, Salt, Sugar, Soy Sauce, Carmel Color, Anchovies, Onions, Tamarinds, Flavoring, Xanthan Gum, Potassium Sorbate, Sodium Benzoate, FD&C Red No 40), what I taste, and things found in most kitchens. Real Woody`s is a little darker (more carmel color & Red no 40) and tastes more strongly of tamarinds.


Found this recipe for a substitue for woody's there are also bottles available on e-bay

Dreadful news about W's sauce being discontinued! I've been a fan for 25 yrs. I've had to ration myself for years as I live in Australia and I only get to buy a bottle when I visit the USA!

Just a suggestion Folks,
You are attempting to reproduce a recipe that has been around for over 70 years.....
BEFORE chemicals
It was made in Louisiana in the early 1900's.....
Think BASIC and go from there in your attempts to reproduce this wonderful product.
Low and SLOW cooking with flavors found at the time....think about it.

Heck, the secret may actually be alligator poo or crab roe for all we know.

It is my understanding that the tamarind is a tree whose fruit and/or roots are used for Worcestershire sauce and Pickapeppa sauce, as well as fish sauce, drink and candy ingredients.

My middle-aged librarian mind remembers finding it in a liquid concentrate in a jar originating from the fruit, as well as a frozen and more solid state originating from the roots at a Whole Foods store. I used the liquid in the jar. Regretfully, the jar is gone; therefore, I do not have label information.
