Subject: BS: My duck is cooked! From: Little Hawk Date: 27 Mar 12 - 10:31 PM I got the hankering the other day to eat some roast duck. I hadn't had any in at least 10 years (roast duck, I mean...not sex). So I figured I'd cook it myself (the duck, mean...you gotta 'splain EVERYthing here in very specific terms or some people get the wrong idea). Went out to the local grocery, bought a frozen "jeune dindon" (young French duck?), and brought it home. It took 2 whole days to thaw that duck out. Then I looked up a roast duck recipe on the Net, followed it closely, and....voila!!! I ate roast duck tonight! I had stuffed it beforehand with chopped up sweet potatoes and green onions. Wowee!!! Really good. I am now basking in the satisfaction of a job well done and wondering what culinary heights to scale next. Roast goose? Ostrich? Pheasant under glass? I'll have to give it some careful thought. |

Eatit Seems to work about every time. I haven't noticed that using a fancy name for something changes how it tastes, but once when having a meal with a friend I was faced with a rather unidentifiable item and asked what it was called. I was informed "in our family it's called SHADUPANEATIT." The name was appropriate, but I've never tried to replicate the item. John |

I've seen so many dindons in the last few decades that I got confused, but I have checked the wrapper it came in, and it's definitely a canard. Spaw - Thanks for that bit of sage advice. Good story, but... upon arriving home, one of my roomies was thrilled and offered to cook the ducks. When dinner was served, I vowed never to kill another duck. My old man's recipe... place ducks on 2 2X4s to drain grease into roasting pan. Cover with preferred spices. Brown at 400 for 20 minutes. Cover and cook for 1:40h at 375. Throw ducks out the door and eat the 2X4s. |

It's easy, just grate into a pan the zest and add the juice of a couple of oranges. Add quite a bit of sugar ( at least two tablespoons) and simmer gently until it thickens. It cuts the grease a bit of the fatty duck meat. My only disappointment with duck is the relatively small amount of meat on them, compared to a chicken. Also, it needs lengthy cooking or it's tough! Sage-and-onion is great with it too. Yum, this is making me peckish! |

It wasn't bad eating, but you had to watch for the bird shot. That wasn't dangerous or anything, except for time my mother fixed cabbage with the duck and my brother swallowed some of the shot and blew a hole in his mattress after he went to bed that night. |

From: catspaw49 Date: 29 Mar 12 - 06:58 PM I came up with an excellent recipe for venison roast based on the hinese roast duck.......We call it "Peking Buck." 3-4 pound venison roast 1/2 teaspoon ground cinnamon 1 teaspoon fresh ground ginger 1/4 teaspoon ground nutmeg 1/4 teaspoon ground white pepper 1/8 teaspoon ground cloves 3 tablespoons soy sauce 2 tablespoon honey 2 orange, sliced 1 tablespoon chopped fresh parsley Tastes great with some plum sauce! Also do deer like lamb which we call "Bambi Lambi." The ground deer makes great "Sloppy Doe." Spaw |
