Then I need another chunk of time -- n Tried knockoff sauce #1 on catfish last night. The texture was thicker than Woody's, so it stayed put on the fish instead of running off. This was an effect I liked, but I imagine it was only happening because of the large amount of cumin I used, which would tend to have a thickening effect. The final recipe, with less cumin, will be runnier. Anyway, we all loved the flavor. My son even liked it better than Woody's. I'd say it's almost as good -- but different, of course. I still want my Woody's! I am fairly sure that -- less some cumin and plus some of the mystery flavor, which I hope will prove to be tamarind -- I am close. Claire |

All that is listed in the ingredients is tamarind puree (86%), water, salt. It is made in Penang, Malaysia by Jeenhuat Foodstuffs. Dunno if you can get that brand where you are. I love the sweet and sour flavour of tamarind in food. Never had Woody's sauce though, but it sounds nice. |

That could well be it, if tamarind has the kind of bitter, rank, not-exactly-food taste I am missing...I can't say that I know what it tastes like, except as a sweet paste in Thai dishes. Now, where do I find tamarind outside the context of steak sauce, worcestershire sauce, and Thai restaurants? Can you get it in any form that isn't sweet? I'm sure if Woody's used tamarind jam, or whatever, they'd say so; I think it would have to be a single-ingredient product (like an extract) to be listed on the ingredients merely as a "flavoring." Alas, when I tasted knockoff sauce #1 the next day I found I had added way too much cumin; the cumin flavor grew like magic overnight. My sauce is really good, but it's way reminiscent of chili (the dish, not the ingredient) -- so I will definitely be starting over. Claire |

I ended up with a half-gallon batch of something that's darned good, and it looks like Woody's -- but there's a an upfront flavor in the real product that I can't identify or recreate, so far. If those of you who still have a jar would you take a tiny taste, it's the obvious flavor right upfront that doesn't (to me) quite taste like food. It's a touch bitter and a bit rank -- but I mean this in a good way. What is it? I worked on my batch immediately after watching a Paula Dean cooking show on various types of barbeque. Got some ideas I wouldn't have thought of from that, including the addition of instant coffee to my knock-off Woody's. That did help, and adding cumin helped even more...but until I can figure out what the missing flavor is, it won't be Woody's. Does anyone want me to post the ingredients of Batch #1, or should I try to get it perfect before posting a recipe? |

This recipe is based on the order ingredients are listed, what I taste, and things found in most kitchens. Real Woody's is a little darker (more carmel color and tastes more strongly of tamarinds). |

It is indeed along the same lines, but not nearly as intense as Woody's. Perhaps if it were reduced to eliminate the extraneous liquid and if some Liquid Smoke were added to bring up the mesquite (or more likely hickory) factor, it would do for that July 4 emergency. Had a bit of concern when it wasn't at the local market for a few months, but then it came back. It's a bit strong by itself, but as you say, mixed with some sweeter/hotter sauces, it's great. The ingredient list not only contains "spices" but "flavoring", too. Hmpf! Trying to approximate it at home, the liquid hickory smoke will be key. Probably not very healthy, but hey. It made catfish heavenly, and mixing in some Woody's made other types of sauces (sweet barbecue sauces for chicken, for example, and hoisin sauce for lamb) infinitely more interesting. So, does anyone have any information on what happened to the company, a replacement product I could order, or a recipe for anything similar? Many thanks in advance. Claire |
