I like a fresh cashew now and then.... almonds for cooking but the chocolate covered ones are NOT allowed in my house. Same banishment for peanuts as I can't stop and peanuts put the weight on me and make me horny as hell, two things I don't need, alone or in combo. So, tell us about your nuts eh? |

Those from the American southwest have better, stronger flavor than those from Asia; the latter are found in stores here, shelled and often slightly 'beyond the best buy date'. (once had the southwest U. S. nuts in stuffing for a turkey; recipe of the late Tex Austin, don't know what was used with them, but it was very good. Wish I knew). American pecans, almonds both run about $12.00/2 lbs (907g) in stores here (Calgary). The ones from Asia are cheaper, but I don't know what chemicals, etc. were used in growing and packing them. New Mexico peanuts in the shell, 5 lb/$8.00, in stores here (western Canada). Lots of fat, but I can't resist! Can't get the Georgia or Texas peanuts here except by mail order. |

Posted elsewhere, but again- 2 cups unsalted nuts (pecans or almonds with skin on) 1 teaspoon lemon juice (or juice one lemon) 1/2 to 2/3 teaspoon sugar 1 teaspoon salt In a bowl, mix juice, salt and sugar. After this dissolves, add nuts. Mix thoroughly (I use a fork) until nuts are coated. On cookie sheet, spread the coated nuts. Bake at 120 C for 15 minutes or so- dry or brown to suit your taste. When cool, store in sealed container (I reuse jars with screw lid). Try this with a small amount, adjust to suit your taste and your oven. |

It's at an elevation of 7,500 feet, in a beautiful pine forest (that regularly had devastating fires). I was a couple of weeks too early for the pine nut harvest, but people were already making preparations. Apparently, it's a big social event, a good excuse for barbecues and beer drinking. I'm sorry I missed the experience. Are pine nuts really nuts? Are they in the cones of trees? Which coniferous trees have edible "nuts"? Pine nuts are the seeds of the tree and can be grown anywhere, but no nuts for about the first 10 years. Cones open in the fall and nuts (seeds) fall out, they are ready to harvest. Digger pine and Coulter pine have huge cones and larger pine nuts, but require a sledge hammer or jackhammer to open. |

We had two very productive pecan trees in our yard and had severe pecan glut every autumn. We gave away pecans in the fall the way green thumbed gardeners give away zucchini in the summer, and still had three or four large grocery bags full of them in the pantry year-round. I've had my fill of pecans and don't care if I never see another of them. You can have my share. I like Brazil nuts. |

I thought I'd try the nuts from the 'natural' food store once, but they were even worse - mildewed. (Maybe it was natural mildew.) Or you could do what those in the know do. You buy them in big packages through a not-for-profit organization which obtains them from suppliers out in the countryside. Then you keep them in the deepfreeze till the next autumn, when you support another worthy cause. |

Here's sommat... 50g of cocktail peanuts yield 330 calories. 50 g of honey roasted peanuts yield 320c and have 33% less salt. Now... I am reading this from the labels... % of daily fibre for coctail is 12% and for honey rasted is 16%. How can that be? It's driving me... in more ways than one. (I wonder... if the higher salt content causes more of the fat to stay in the body longer and thus be absorbed, yieliding the extra 10 calories.) |
