So... Pine Nuts are a million bucks a pound? Macadamia Nuts are $$$ too? I like a fresh cashew now and then.... almonds for cooking but the chocolate covered ones are NOT allowed in my house. Same banishment for peanuts as I can't stop and peanuts put the weight on me and make me horny as hell, two things I don't need, alone or in combo.

So, tell us about your nuts eh?

now in another thread I stated after a male musician had said I was the bollocks after hearing me sing, that I wish I'd had the speed of wit to reply, "well I haven't checked lately but my voice has gotten deeper."

I just checked and I still ain't got any.

Piñons (pine nuts) have always been expensive. Those from the American southwest have better, stronger flavor than those from Asia; the latter are found in stores here, shelled and often slightly 'beyond the best buy date'.
(once had the southwest U. S. nuts in stuffing for a turkey; recipe of the late Tex Austin, don't know what was used with them, but it was very good. Wish I knew).

American pecans, almonds both run about $12.00/2 lbs (907g) in stores here (Calgary). The ones from Asia are cheaper, but I don't know what chemicals, etc. were used in growing and packing them.

New Mexico peanuts in the shell, 5 lb/$8.00, in stores here (western Canada). Lots of fat, but I can't resist! Can't get the Georgia or Texas peanuts here except by mail order.

Nevada produces the best Piñon Pine Nuts.

Just as tasty as the New Mexico or Arizona varieties but Nevada type has a softer shell.

Buy now as dealers may run out by Christmas...

Most packaged salted nuts have too much salt. Get the unsalted in the bakery section and do your own.
Posted elsewhere, but again-

2 cups unsalted nuts (pecans or almonds with skin on)
1 teaspoon lemon juice (or juice one lemon)
1/2 to 2/3 teaspoon sugar
1 teaspoon salt

In a bowl, mix juice, salt and sugar. After this dissolves, add nuts.
Mix thoroughly (I use a fork) until nuts are coated.
On cookie sheet, spread the coated nuts. Bake at 120 C for 15 minutes or so- dry or brown to suit your taste.
When cool, store in sealed container (I reuse jars with screw lid).

Try this with a small amount, adjust to suit your taste and your oven.

Pasta Sauce (so good it may be illegal in some localities)

garlic
olive oil
basil (leaves, no stems)(chopped)
Parmesan cheese (freshly grated)
pinon pine nuts (small handfull)(shelled, of course)

Mix in blender as quickly as possible, adding pine nuts last so they still have some integrity.

We have two cans of nuts on the kitchen counter, one of mixed nuts and the other of cashews (lightly salted). I usually have a couple of handfuls of either or both every day. Barbara has some chocolate covered almonds stowed away somewhere. She rations those.

I'm also very fond of honey-roasted peanuts.

But the triple-ginger cookies!! I'm addicted. OD every chance I get!

All from a nearby Trader Joe's.

About ten years ago, I had to work at the Los Alamos National Laboratory in New Mexico. It's at an elevation of 7,500 feet, in a beautiful pine forest (that regularly had devastating fires). I was a couple of weeks too early for the pine nut harvest, but people were already making preparations. Apparently, it's a big social event, a good excuse for barbecues and beer drinking. I'm sorry I missed the experience.

Are pine nuts really nuts? Are they in the cones of trees? Which coniferous trees have edible "nuts"? What's involved in the harvesting process, and how do people know when the nuts are ripe?

Yep...as Don Firth says, lightly salted cashews from Trader Joe's! I replenished my stock last week. I have some very nice chocolate from there also which...ummmm... helps the cashews slide down.

Now MY serious weakness is Pepperidge Farm cookies with white chocolate & Macadamia nuts! My restraint is to only buy them on sale.

Piñon pine nuts are from the tree of the same name, a native of the western United States.

Pine nuts are the seeds of the tree and can be grown anywhere, but no nuts for about the first 10 years.

Cones open in the fall and nuts (seeds) fall out, they are ready to harvest.

Digger pine and Coulter pine have huge cones and larger pine nuts, but require a sledge hammer or jackhammer to open.

They say familiarity breeds contempt. Well, the house in which I grew up was located on land that was formerly a pecan orchard. We had two very productive pecan trees in our yard and had severe pecan glut every autumn. We gave away pecans in the fall the way green thumbed gardeners give away zucchini in the summer, and still had three or four large grocery bags full of them in the pantry year-round. I've had my fill of pecans and don't care if I never see another of them. You can have my share.

I like Brazil nuts.

In Nevada and Utah, Piñon means Pinus monophylla.

There are about 15 million square miles of P. edulis as opposed to 55 million acres of P. monophylla in the western US.

sweet chestnuts

yum

prick them
roast them
peel them
quarter them

add to sauteed portabello mushrooms chopped, 3 large cloves of garlic minced in butter, add cooked risotto, fresh parmesan and single cream bit of veg stock and water and simmer until thick and creamy.

yum again

or eat them plain... still warm, better if roasted on an open fire as they get the smoky flavour.

Here is Kansas City you could buy dried-up, expensive nuts in small plastic packages in food stores.

I thought I'd try the nuts from the 'natural' food store once, but they were even worse - mildewed. (Maybe it was natural mildew.)

Or you could do what those in the know do. You buy them in big packages through a not-for-profit organization which obtains them from suppliers out in the countryside. Then you keep them in the deepfreeze till the next autumn, when you support another worthy cause.

Almonds- $6/lb if you order 25 lbs. (get together with friends to order) http://almondsbrewerfarms.com. Organic. Shipping included.

Lost my low cost pecan supplier- anyone know of one?

Supermarts here (Superstore, Cosco) have 2-lb packages of U. S. grown pecans and almonds that are fresh and good at this season. Surprised that KC doesn't have them.

Little Hawk commented:

Peanuts make you horny, gnu??? Are you serious? I haven't noticed any such effect from consuming peanuts, not even in vast amounts.

Googling "peanuts aphrodisiac" got me to this, right away:

Aphrodisiac Peanuts

By Bron Hendrixson

Rich in Vitamin E, "the sexuality vitamin," and vitamin B1, peanuts and peanut products are recommended by at least three leading sexologists for a restorative diet. Peanut butter is particularly worthy and nutritionists claim that this easily digested high-protein food makes for an adequate survival diet when combined with a citrus fruit like oranges. It's said that a jar of peanut butter is found in four out of five American homes, and apparently more of us should dip into that jar. Those with more exotic tastes might search out the recipe that futurist French chef Jules Maincave invented during World War One for a dish called "young monkey stuffed with peanuts."

And it goes on, with recipes.

Just the two of us, so no longer belong to Costco, but a neighbor is a member and picks up items for us.

A good buy there is pure vanilla extract in pint bottles; much cheaper than the small bottles in most stores. And quart sized maple syrup.
Also some spices/mixtures; a good lemon pepper mix in quart containers.

So... five... five tins for Xmas prezzies! Salted Deluxe mixed, salted mixed, cashews, cocktail peanuts and honey roasted peanuts. So, the relatives don't like the fact that I have lost over 60 pounds while they have gotten fatter?

Here's sommat... 50g of cocktail peanuts yield 330 calories. 50 g of honey roasted peanuts yield 320c and have 33% less salt.

Now... I am reading this from the labels... % of daily fibre for coctail is 12% and for honey rasted is 16%.

How can that be? It's driving me... in more ways than one.

(I wonder... if the higher salt content causes more of the fat to stay in the body longer and thus be absorbed, yieliding the extra 10 calories.)

Because they didn't need shelling. The shop said is was now illegal for them to sell them as the "Shells are poisonous"..What the F*** is that all about, if you can chew a Brazil nut shell you deserve to be poisoned. They are also much drier, not the same at all.

A southern friend of mine is always taking me to task for the way we Yankees pronounce: pecan.

I love nuts, and gave them up when I was in weight watchers years ago, at their suggestion: WRONG MOVE. Not only are they delicious and filling (in SMALL handfuls) but they are healthy! Healthy as chocolate and blueberries, and lovely in a snack entwining all three. THANK THE LORD that something I like is healthy - lmao.   And I've slowly, but steadily, been losing weight as I've incorporated nuts in my diet. (Of course, laying off the Big Macs did no harm either ;D )

Walnuts are probably best for the heart. But I love Brazil nuts, Macadamias, cashews, filberts, really just about any nut.
btw Peanuts, as may have been mentioned, are not really a nut, they are a legume. I love them best when FRESH in the shell, and untoasted, which I can always find in roadside stands in Virginia, North Carolina, etc. but not up here.

The perfectly roasted nut is so tender
its like butter with a subtle crunch.
The search for the perfect nut can be relentless.
Until you get that one or two sour bitter and spoiled nuts that makes you spit out the revolting pieces.

Those rotten nuts serve as my will power.
