I'd bought a bottle from a fund-raising stall & wanted more, so looked up the recipe in my old Commonsense Cookery Book (the bible of generations of school students, first published 1914 by the Home Economics Teachers Association & still selling!) That recipe was too complicated & besides I didn't have the most of the ingredients, but on the same page was a recipe for Date Chutney - sooo easy & I just needed one item. So I made my version of Date Chutney. One pound of dates, chopped finely 1 tablespoon of salt 1 tablespoon dry mustard 1 tablespoon ground ginger (omitted cos I can't stand ginger) 1 teaspoon cinnamon 1 cup boiling water 1 cup vinegar. Boil all ingredients together for 5 mins. Pour into warm jars. Seal when cool. (I used a large jar, which I hadn't sterilized, so I put it straight into the fridge.) So far I've used it to flavour my normal evening meal (soupy stew = lots of vegs & meat etc boiled & flavoured) or on chick pea & lentil burgers, roast chicken, instead of butter in a sandwich, licked the spoon ... sandra |

I went through the contents of the fridge from top to bottom and threw out all the bottles of chutney. Friends would bring a bottle and say "Try this." I would give them a sickly grin and say "Thank you." I would taste a smidgeon and put the bottle in the fridge and forget it. I was getting short of space. So out with it all. |

My son didn't complain and dead hard to convince to try anything new. This weekend it was my first time making jam, it was such a success I am going to do some mango or apricot chutney next time. As for smearing it wouldn't it sting? Keep it for the cheese and curry, yoghurt is much better. |

It's also very good on dead animal of choice. Check Rodale's Stocking Up III cookbook for a good recipe. I think the Mennonite Community Cookbook by Mary Emma Showalter has a chutney recipe. Actually, that cookbook has some kick-butt relish etc recipes. |

I throw in every vegetable I can find (usually about 10 veggies cos I love 'em) & sometimes a protein (meat, fish, beans, cheese, etc) then a flavouring or sauce - chutney, pickles, mustard, herbs/spices or commercial sauces. Boil till thick & eaten, yum. Sometimes I steam or stirfry my veggies (with or without protein) & serve with a topping of chutney, pickles or mustard. yum. sandra (who nearly starved in hospital - no decent veggies, just small amounts of protein with a dash of veggies - about 1 tablespoon worth - ahhhhhh) |

Which is a shame because they might be great additions to some recipes. Especially veggie recipes, which often require that something extra flavouring wise. So far I've googled the ideas of i) adding chutney to veggie curry (in it as an ingredient) ii) adding chutney to boston baked beans iii) adding chutney to casseroles I also make a really good potato and cheese pie, which chutney would definitely work well with. I also reckon I might dabble in some wintery savoury pasties, with potato or beans, cheese and chutney. I'm sure other people must get gifts of lovingly made chutney in Xmas hampers and never know what to do with the stuff.. I want to stop wasting it! |

From: gnomad Date: 03 Feb 09 - 12:33 PM Chutney goes well with many savoury dishes; ploughmans lunch, any cold meats you might eat, nut roast, and popadums spring to mind. I imagine that it would make a decent accompaniment for vegiburgers or vegi sausages, but I haven't tried it. I like it with those savoury rolls that look like a sausage roll, but contain a cheesy mixture. If you ever make sweet & sour sauce you can use chutney for the souring element, and some of the sweetening. It is also a useful ingredient for marinading meat before grilling, but I expect that is off SR's menu. Bad time of day to be typing this, I'm starting to get really peckish. |
