There are so many different types of Chutney with different ingredients - but generally they can be used (a little) in soups, in pasta and rice sauces, on bread with cheese, or cooked in pastry.

AS I said earlier, I like chutney & recently made some!

I'd bought a bottle from a fund-raising stall & wanted more, so looked up the recipe in my old Commonsense Cookery Book (the bible of generations of school students, first published 1914 by the Home Economics Teachers Association & still selling!)

That recipe was too complicated & besides I didn't have the most of the ingredients, but on the same page was a recipe for Date Chutney - sooo easy & I just needed one item.

So I made my version of Date Chutney.

One pound of dates, chopped finely
1 tablespoon of salt
1 tablespoon dry mustard
1 tablespoon ground ginger (omitted cos I can't stand ginger)
1 teaspoon cinnamon
1 cup boiling water
1 cup vinegar.

Boil all ingredients together for 5 mins. Pour into warm jars. Seal when cool.

(I used a large jar, which I hadn't sterilized, so I put it straight into the fridge.)

So far I've used it to flavour my normal evening meal (soupy stew = lots of vegs & meat etc boiled & flavoured) or on chick pea & lentil burgers, roast chicken, instead of butter in a sandwich, licked the spoon ...

Well, finally got around to it.
Last year when this thread started, I swore I would do it.
Today I did it.

I went through the contents of the fridge from top to bottom and threw out all the bottles of chutney. Friends would bring a bottle and say "Try this." I would give them a sickly grin and say "Thank you."
I would taste a smidgeon and put the bottle in the fridge and forget it.
I was getting short of space.
So out with it all.

I added a dessertspoon of commercial chutney to a casserole which was really yummy and made such a difference to a boring stew. My son didn't complain and dead hard to convince to try anything new. This weekend it was my first time making jam, it was such a success I am going to do some mango or apricot chutney next time. As for smearing it wouldn't it sting? Keep it for the cheese and curry, yoghurt is much better.

Chutney is good on toast, with or without spreadable white cheese product. It's also very good on dead animal of choice. Check Rodale's Stocking Up III cookbook for a good recipe. I think the Mennonite Community Cookbook by Mary Emma Showalter has a chutney recipe. Actually, that cookbook has some kick-butt relish etc recipes.

It is a great website and their chutney is handmade in small batches/there are suggestions on the website of what to serve the chutney with...NY Times food critic listed this chutney as one of the 10 best foodie gifts in Dec.2008

CHUTNEY BARBECUE SAUCE

Makes about 1-1/2 cups

You'll get a deeply browned chicken with this recipe.

1 jar (8-1/2-ounces) mango chutney

1/3 cup wine vinegar

1 tablespoon spicy brown mustard

1 tablespoon brown sugar

1/4 teaspoon Cayenne pepper

In small bowl, combine all ingredients. Use as basting sauce for grilling 4 to 5 pounds of chicken during last 10 to 15 minutes cooking. Lightly oil poultry before cooking, and turn often to avoid burning.

Chutney (and indeed just about any jam, jelly, or preserve) is good in sammiches in place of mayo or butter-- no fat.

We had a good one today like that-- italian sausage on oat bread with apple butter.

SRS isnt that the recipe for Choux pastry? as in Chocolate eclairs!! and profiteroles (drool, drool) full of whipped cream and with chocolate sauce poured over!!! (MMMMMMmmmmmmmmmmmmmm!!!

Personally I think chutney should be smeared all over ones body then licked off by a team of selected members of the opposite sex(or same sex if that is your preference) of your choice, not less than 4 in number! Other wise just add to cheese(strong chedder and parmesan shavings) on toast!

Rosie, my normal evening meal is a soupy stew (eaten in a bowl with a spoon.)

I throw in every vegetable I can find (usually about 10 veggies cos I love 'em) & sometimes a protein (meat, fish, beans, cheese, etc) then a flavouring or sauce - chutney, pickles, mustard, herbs/spices or commercial sauces. Boil till thick & eaten, yum.

Sometimes I steam or stirfry my veggies (with or without protein) & serve with a topping of chutney, pickles or mustard. yum.

sandra (who nearly starved in hospital - no decent veggies, just small amounts of protein with a dash of veggies - about 1 tablespoon worth - ahhhhhh)

Last week on Simply Ming or whatever that PBS cooking show is on Saturdays he made a hot water dough. Funny, I've eaten things made from that but didn't know what it was called. And he did a wonderful recipe with adding shallots and oil and making a flat bread that he fried then cut up.

Well Martin, that you can be sure of. Because I can never think of anything to eat them with... Which is a shame because they might be great additions to some recipes. Especially veggie recipes, which often require that something extra flavouring wise.

So far I've googled the ideas of

i) adding chutney to veggie curry (in it as an ingredient)
ii) adding chutney to boston baked beans
iii) adding chutney to casseroles

I also make a really good potato and cheese pie, which chutney would definitely work well with.

I also reckon I might dabble in some wintery savoury pasties, with potato or beans, cheese and chutney.

I'm sure other people must get gifts of lovingly made chutney in Xmas hampers and never know what to do with the stuff.. I want to stop wasting it!

Mind you, the first thing to do with decent chutney is to WAIT! People too often open them before they've had a decent chance to blend and mellow. Sharp, vinegary chutnies are downright unpleasant IMHO.

a quick googling shows a bunch of pastry recipes combining chutney and various cheeses; which cheese probably depends on what chutney you have; some were hot water doughs, some phyllo; there was even one using pizza dough; so probably any dough you could use.

Many people like chutney with rice.

When I make tuna salad, I use wasabi and whatever pickle relish is about as well as other spices in addition to the usual tuna, celery and mayo. Chutney would go quite well there.

Chutney goes well with many savoury dishes; ploughmans lunch, any cold meats you might eat, nut roast, and popadums spring to mind. I imagine that it would make a decent accompaniment for vegiburgers or vegi sausages, but I haven't tried it. I like it with those savoury rolls that look like a sausage roll, but contain a cheesy mixture.

If you ever make sweet & sour sauce you can use chutney for the souring element, and some of the sweetening. It is also a useful ingredient for marinading meat before grilling, but I expect that is off SR's menu.

Bad time of day to be typing this, I'm starting to get really peckish.

If you eat Curried stuff, it's great. Cuts the spicyness. There are vegetarian curries....but I use so little chutney because I am the only one who eats spicy food here.

Well it's no crazier than some of the questions down here in BS now is it?

Each year at Xmas I get given jars of homemade Chutney.

I don't eat much in the way of meat. Which would probably be the first thing most people might associate with chutney. But I do love cooking, baking and making savoury pastries and so-on.

So any ideas for what I can do with Chutney?
