Dear Folks,

I know there have been occasional efforts to do a MudCat Cookbook for fund-raising. Have any of these efforts come to fruition? Has anyone done a cookbook specifically using the recipes of the fictitious offerings brought to the various song circles?

Just a thought, but might it be better to distribute this the way the calendar was? The book is for 'Catters (at least mostly), and I'd hate to see the aggravation of 1)initial money outlay for printing and binding, 2)storing the books in some poor soul's house, 3) international distribution by snail mail, 4) printing too many/few, 5) etc. If the book is in a download-able form, then no more are printed than are actually wanted, international delivery time is cut (at least) in half, nobody has the extra copies in the way, and more money can go to Mudcat. There may be lots of reasons not to handle the cookbook this way, but I'm not computer literate enough to know.

Hi, Shula, as I remember, from the past 3 years, we haven't had any from the "song circles," but we've had several recipe threads with good intentions of turning them into fundraisers.

The main one was Mudcat Fundraiser-Post Your Recipe.

Then, there was Liz's JUST DESSERTS.

Both of those were followed by these, if I remember right:

Mudcat Cookbook Part II and,

Mudcat Cookbook-FundraiserII-recipes.

If you put recipe in the filter and set the date back 3 years, there are a few other ones whioh show up also. The main fictitious postings we've had about food, that I can remember, were in teh Tavern threads and some of those were genuine, while others were quite imaginative while probably not good for human consumption, including the lime green jello wrestling pit!

Hope this is some of what you were looking for,

You are more than welcome to add more recipes, especially to the puddings one... some that don't acutally have chocolate in would be good, although I understand that that goes against the definition of pudding...... well, it does in MY dictionary! (Ergo I am a pudding, I contain chocolate... best be saying it myself before someone else does....)

I'm still trying to reformat the Just Desserts into a readable and postable style..... it got frustrating and put on the back boiler for a while.... the pictures were making it far too complicated so I'm taking them out and trying again.

One day there will be a link. One day...........

it's got chocolate - well, sort of!!


Chend's Easy and Decadent RUM-BAR
(original recipe obtained from a work colleague in Darwin)


BUTTER (chopped)                200 grams
DARK BROWN SUGAR (packed)        ½ cup +
EGG (beaten)                        1
COCOA POWDER                        1 tablespoon
VANILLA ESSENCE                       1 teaspoon +
MIXED FRUIT                        1 cup        
(I use mixed peel, glace cherries, glace ginger, plus raisins, currants, and a few sultanas)
BISCUITS ("Morning Coffee")        1 packet
RUM (dark)                        exceedingly generous slurp!!!!
ICING SUGAR                        1 cup
LEMON JUICE                        2 tablespoons
ALMONDS (slivered)                some …


 Crush the biscuits to very small pieces and set aside.

 Place all ingredients (except the Rum and the Biscuits) into a saucepan over low heat. Gradually increase heat to boiling, stirring all the time. Turn off the heat and leave on the stove for 2 minutes.

 Add the crushed biscuits and the Rum, mix well, and pack into a dish – I use a small loaf pan, lined with Gladbake.

 Place in fridge to cool and solidify.

 Turn out onto serving plate and cover with lemon icing thinner on sides (be generous with the lemon juice too!!), decorate with chipped almonds.

 Serve in fairly thin slices – it's wonderfully rich!!!

I put up this recipe a good ten years ago, maybe more before web days, on a bulletin board forum called "Cuisine". Today I find it in at least three, maybe four places on the Web. I'm famous!

    Title: BACON AVOCADO & CHEESE OMELETS WITH TOMATO SALSA
Categories: Sauces, Cheese/eggs
      Yield: 2 Servings

    2/3 c Finely chopped seeded
          Tomato
      2 tb Finely chopped red onion
      1    Pickled or fresh jalapeno
          Chili, or to taste, seeded
          And minced. (wear rubber
          Gloves)
      2 tb Minced fresh coriander
          (cilantro)
      1 tb Fresh lime or lemon juice

--------------------------OMELET--------------------------
      4 lg Eggs
      2 tb Water
      1 tb Unsalted butter
      3    Slices of lean bacon,
          Cooked and crumbled
      1 sm Avocado (preferably
          California) peeled and
          Chopped in half-inch cubes.
    1/2 c Coarsely grated Monterey
          Jack (about 2 oz)

       In a small bowl stir together the tomato, the
onion, the jalapeno, the coriander, the lime juice,
and salt and pepper to taste until the salsa is
combined well. In a bowl whisk together the eggs, the
water, and salt and pepper to taste.

       In an 8-inch skillet, preferably non-stick, heat
1/2 teaspoon of the butter over moderately high heat
until the foam subsides, pour in half the egg mixture,
tilting the skillet to spread the egg mixture evenly
over the bottom, and cook it for 1 minute, or until it
is almost set. Sprinkle half the omelet with half the
bacon, half the avocado, peeled and cut into 1/2 inch
pieces, and half the Monterey Jack and cook the Omelet
for 1 minute, or until it is set. Fold the omelet
over the filling, transfer it to a plate, and keep it
warm. Make another omelet in the same manner with the
remaining butter, egg mixture, bacon, avocado, and
Monterey Jack and serve the omelets with the salsa
over. Serves 2. (or 3 if you have enough other things

(both this and the previous RUM-BAR use the British/Australian measuring system)


English IRIS's Yummy Bread Pudding
(also known as "Harry Lauder's Wedding Cake")


SOAK half a loaf of de-crusted BREAD in a colander (through which boiling water has been poured).
MELT almost half an ounce of BUTTER in your pudding dish – be careful not to burn it!
MIX together :
the BREAD, half a pound of MIXED FRUIT, half a pound of LIGHT BROWN SUGAR,
2 EGGS, 2 level teaspoons of MIXED SPICE, almost 2 level tablespoons of TANDACO PREPARED SUET MIX (which already has aerated flour in it).
Put this mixture into your pie dish and leave it in a MODERATE OVEN for just under the hour (checking with a knife after half an hour). Oven is to be preheated, place dish towards the top.
Can be served hot – or later in cold slices.

If, like me, you enjoy a chewy, rubbery texture, this recipe has that potential !!!

Jack is a fairly mild white cheese, in a firm (mild cheddar-like) consistency. Doesn't have as much flavor as a mild swiss or something like edam. But those are the ones I'd probably use as substitute if you can't find jack.

LUMBERJACK   CAKE (the best!!!)**

Cake Ingredients :
Flour - 1 and a 1/2 cups Plain (I use organic unbleached)
Bicarbonate of Soda - 1 tsp
Sugar - 1 cup (but I prefer half cup Dark Brown, instead)
Mixed Spice - 1 tsp (also my option)
Dates - 1 cup (200g), pitted and chopped
**Apples - 2 large (400g), finely chopped (I use Granny Smiths)
Eggs - 1
Butter - 125g
Vanilla Essence - 1 tsp
Water - 1 cup, boiling
Topping Ingredients :
Sugar - 1/2 cup Brown, firmly packed
Coconut - 2/3 cup, shredded
Butter - 60g
Milk - 1/2 cup

Cake Method :
Grease a deep 19cm square cake tin and line base with paper, then grease paper. Combine apples, dates, soda, and water in a bowl and stand until warm. Beat butter, vanilla, and sugar in a small bowl, preferably with electric mixer, until light and creamy. Add egg, beat until combined. Transfer mixture to larger bowl, stir in sifted flour alternately with apple mixture and pour into prepared tin.
Bake in moderate oven (170 degrees C.) for 50 minutes.
Meanwhile, make Topping then spread over cake and bake another 30 minutes, or until topping is golden brown.

Topping Method :
Combine butter, sugar, milk, and coconut in pan and stir over low heat until butter is melted and sugar is dissolved.

Cool in tin. Serve with cream.
Suitable to freeze, not suitable to microwave, recipe can be made a week ahead.

I guarantee that this recipe is worth the effort, "or your money back" !!!

**(When I made this recently, I actually used 400g of chopped apples, rather than 400g of apples, then peeled and cored - which made it wetter and more "pudding-ey"!!)

RICH-JOY's OLE ROCKY TOPS!!
                                
Ingredients :
Flour - 8oz Self Raising (wholemeal)
Butter - 2oz
Sugar - 3oz (Raw / Demarera)
Sugar - extra to sprinkle on top
Egg - 1
Milk
Fruit Filling : 2oz each of
Currants or Dates
and Mixed Peel (esp. lemon) and chopped Ginger (glace)
- really you make your own version with what you have or like !!

Method :
Sift flour, then rub butter - with fingers - into flour till it's like breadcrumbs. Add sugar, fruit, peel etc. Mix well and add sufficient moisture - egg, milk to make a stiff mixture. Place in dessertspoon dollops onto greased trays.
Bake in hot (225 degrees) pre-heated oven for about 10 minutes (keep an eye - and your nose - on them !!). Sprinkle with a little extra sugar before cooled.
Best eaten hot and fresh, or well-buttered as get older.
(but normally none left ...)

I think this makes 18 or 24, depending ...

here is something superquick and easy for low-carb people (not low fat, and not low calorie).

Take 1 pint of whipping cream, 1/2 teaspoon of stevia powder, vanilla or other flavoring, and a few tablespoons of Hershey's chocolate. Whip it up. I also add carbs and flavor by squeezing juice of one orange, or key limes, plus some "zest". Do what your ice cream freezer demands, or just freeze it in freezer and whip it now and then.
